Along with removing all bitterness, the roasting process gives Hojicha its signature earthy aroma, its reddish-brown color, and its unique smoky taste. An Indian single malt whisky from the Paul John distillery, located in tropical Goa. Paul John distillery uses six row barley that is sourced from foothills of the Himalayas. The high fibre and protein content in six row barley, offers a distinct tannic character to the spirit. The tropical climate for maturation means a high angel’s share, 8-10%, as opposed to Scotland’s 2-3%. After just six years of maturation, around 40% of the cask contents is lost to evaporation. That loss would take around 24 years in Scotland! A cracking addition to That Boutique-y Whisky Company’s Cinema Series, with a label that imagines James Bond, Bollywood style.

Dalmore 12 Years Old Sherry Cask Select combines Dalmore’s house style with a delicious sherry influence. The single malt first aged for 10 years in American white oak ex-bourbon barrels. It was then finished in Oloroso and Pedro Ximénez sherry casks from three historic cooperages in Jerez de la Frontera, creating a sweet and elegant character. The whisky has aromas of caramelised orange, ginger and sultanas, laced with honey. The palate brings dark chocolate and crushed almonds with a dusting of cinnamon. Glenmorangie’s A Tale Of Tokyo is the fourth release in the ‘Tale of’ series and the first one to be partially aged in Japanese Mizunara oak casks. It’s actually a marriage of whisky aged in both sherry and bourbon barrels as well as Glenmorangie whisky aged in the rare Japanese wood. It was all bottled together at 46% ABV and sports a label and packaging made in collaboration with celebrated Japanese artist, Yamaguchi Akira. It’s their perspective of the city’s contrasts and layers of history and culture that inspired the design.

Definitive single malt whisky maker, The Dalmore, is releasing a refined new single malt, The Dalmore 45, to add to its exceptional collection.
The Dalmore 45 has been hand crafted by Master Distiller Richard Paterson who has used some of the distillery’s rarest aged liquids to create what Richard himself has described as ‘flawless perfection’.
Initially matured in American white oak ex-bourbon casks, the liquid has then been transferred into two different Vintage Graham’s Port Colheita pipes dating from 1961 and 1963 to create layers of flavour, which are indulgent, smooth and complex.
For its final flourish the whisky was then married together in first fill American white oak ex-bourbon casks providing The Dalmore 45 with a truly unrivalled finish. The Dalmore’s use of multiple casks is a fitting example of the distillery’s commitment to exquisite cask curation, which focuses on sourcing and utilising only the best casks from the world’s finest bodegas and wineries.
Purposefully retained at 40% ABV, The Dalmore 45 features exquisite flavours of red berries, soft liquorice, crushed hazelnuts, bitter chocolate and Manuka honey. This is followed by the sweet flavours of sticky toffee pudding, Bramley apples and juicy dates to finish.
Richard Paterson commented: “By personally selecting the very finest American white oak ex-bourbon casks and Port Colheita Pipes from 1961 and 1963, I have been able to create a truly unique expression which is indulgent and smooth with a vibrant and lively flavour profile. The single malt Scotch whisky, peated to 35ppm (using mainland St. Fergus peat, a sweeter variety than its coastal counterparts) and fermented for a lengthy 160 hours fermentation, was aged in American oak bourbon barrels followed by Chinquapin virgin oak casks, a bold barrel that imparts big, sweet, and rich flavours.

The Meikle Tòir range (meaning ‘big pursuit’ and pronounced mee-kuhl tor) comprises peated whisky made at GlenAllachie Distillery with guidance from legendary master distiller Billy Walker. The Original is a single malt made with mainland peat from St. Fergus, a sweeter, grassier variety than found on the coast. The barley was peated to 35ppm and then the whisky was aged in a combination of first-fill bourbon barrels, American virgin oak casks, and rye barrels. It was bottled at 50% ABV without chill-filtration or additional colouring.

Subsequently, the whisky underwent additional maturation for over two years in wine barriques skilfully sourced by Master Distiller Billy Walker, imparting a distinctive twist onto the GlenAllachie spirit.
Located in the heart of Portugal, the Douro Valley is one of the world’s oldest protected wine regions, established in 1756. With the country’s highest wine classification as a Denominação de Origem Controlada (DOC), this historic region is a significant producer of robust, characterful red wines. The barriques selected have imparted richness of both colour and flavour to our Speyside malt, offering decadent layers of dried stone fruits and delicate hints of warming spice.
This expression is bottled unchilfiltered for flavour with no added colouring at 48% ABV.

Billy added a distinctive twist to this release by ultimately blending four exceptional wine cask finishes into one unique expression: The Cuvée Wine Cask Finish.
The next release of our Cuvée, bottled in 2023, is a harmonious marriage of whisky matured in barriques which previously held premium red wine. The finest casks were hand-picked from the French AOC (Appellation d’Origine Contrôlée) regions of Languedoc and Médoc whilst, across the border, Grattamacco and Recioto della Valpolicella barriques from Italy were sourced to host our honeyed spirit.
Once expertly blended, the resulting golden liquid delivers an exceptionally opulent drinking experience. Expect layers of robust red fruits and gentle spice alongside hints of citrusfrom this smooth yet characterful limited malt.
This limited expression is bottled unchilfiltered for flavour with no added colouring at 48% ABV.

Renowned for his Sherry cask maturation expertise, Billy hand-picked this Oloroso Puncheon (2007 #800179) to be bottled. A drier style of Sherry wine originating from Jerez, a city in the Spanish province of Cádiz, Oloroso offers nuttier flavours, with dried fruits and warm spices. This particular Puncheon has imparted notes of toasted walnuts, dark chocolate tart and winter spices to the 15-year-old spirit held within.

A full set of Collectable Macallan Travel series edition, which depicts the style of The Macallan from the 1920’s to 1950’s. Each release has an illustration with of-the-era artwork featuring classic modes of transport from each decade.
To re-create the style of Macallan in the 1920s, 30s, 40s, and 50s, their Master Distiller sampled bottles of The Macallan from that decade and matched their aroma and flavour with more recent distillations taken from the casks maturing in the warehouses.

This is one of a select number of releases produced using malted barley harvested from neighbouring farms in the Campbeltown area. They were first introduced in the late 1990s, and were eventually re-named as the Local Barley series in the 2000s.
This is the 2021 release of the mid-2010s revival of the Local Barley range. Originally intended to be a 5 part series, which would have made this the last, but this is instead now being marketed as an annual release.
Distilled in May 2011 and bottled in December 2021, the ‘local barley’ comes from the varietal, Belgravia, and was grown in Campbeltown at the Glencraigs Farm.
Limited to only 15000 bottles.
This Single Malt Scotch Whisky has been distilled from barley grown on the Kintyre Peninsula within a few miles of Springbank. The barley is then malted on our own malt floors using traditional production techniques before it is turned into spirit, matured into whisky and bottled on-site, making this a 100% Campbeltown Single Malt.”
The 2021-release of Springbank’s annual Local Barley 10 Year Old single malt has been made with Belgravia barley from Glencraigs Farm near Campbeltown. Aromas of digestive biscuits, summer flowers, rich malt, vanilla custard, custard cream biscuits and vibrant cherry fill the nose, complemented by notes of Victoria sponge, honey, sweet barley, sticky syrup and salted caramel throughout the palate.

The youngest whisky in the Collection and the age statement with the lightest Natural Colour, this exceptional single malt exhibits a golden oak hue, with tasting notes of sweet oak, lemon and vanilla.
THE COLOURS OF JEREZ
With lemon yellow, drips of chalky white, “albero” and “teja”, and a branch from a sherry grape vine, we are transported to the strikingly pale terroir of Jerez de la Frontera.
We collaborated with Artist and Graphic Designer, David Carson for The Colour Collection. He used albariza soil as a medium, applying it to the paper as if it were paint. Beside the 12 Years Old, we see Easter Elchies House, an emblem of the Spiritual Home of The Macallan in Speyside, Scotland.

THE COLOURS OF JEREZ
Warmth emanates through this piece, from the soft orange brushstrokes evoking the orchards of Jerez de la Frontera – echoed in the shade of the wave pattern designed by Artist and Graphic Designer David Carson to the repetition of the bottle and the whisky inside.
This composition, with its dense collage of sliced and ripped forms and typography, is quintessential David Carson, who transformed the graphic design industry by rejecting the notion that text and images should be placed within a specified grid.

THE COLOURS OF JEREZ
During 18 years of patient maturation, the whisky has drawn out the flavours of the cask: the lemon citrus and vanilla of the American oak, the notes of dried fruits, spices and orange citrus from the European oak, and the almonds, toffee, dried fruit, and hint of spice of the sherry seasoning. The result is a sweet and citric flavour profile with dominant notes of sweet oak, clementine and honeycomb.
Artist and Graphic Designer David Carson captures the warmth of the evening sun as it shines on the “teja” tiles on the roofs of the bodegas in Jerez de la Frontera, against a backdrop of vineyards with chalk-white soil – the perfect environment to enjoy a dram of The Macallan.

THE COLOURS OF JEREZ
Artist and Graphic Designer David Carson has brought the influence of the cask to the fore through an array of rich brown tones that evoke the wood and its toasted, caramel flavours, with a hint of spice.
In this organic yet balanced composition, colours, pattern and textures juxtapose each other, creating a sense of the whisky’s complex yet balanced profile.
Amongst the splashes of colour, we can pick out chocolate browns, orange and reddish brown hues that reflect the whisky’s tasting notes of warm spice, vanilla pods and chocolate orange, and a bright yellow reminiscent of the notes of cardamom and candied ginger it leaves on the palate.

An Oa is named after the Mull of Oa in the south west of Islay, which offers the Kildaton coast (where Ardbeg distillery is situated) some protection from the worst the Atlantic has to offer! As such, An Oa is intended to show a more approachable side to Ardbeg single malt that’s as rounded as the Oa peninsular, without losing the characteristic distillery style. In the summer of 2017 this became the first addition to Ardbeg’s core range in over a decade.
Maturation took place in a combination of casks including Pedro Ximénez, charred virgin oak and ex-bourbon, which were all brought together to marry in Dr. Bill Lumsden’s new ‘Gathering Vat’!

Cumulative Time is an appropriate name for this 40-year-old whisky because it’s made using a technique called remnant vatting. It’s a process unique to the distillery in which the malt master carries one batch over, time and time again, before marrying it with the casks selected for each subsequent release. This is done to imbue the spirit with the character of past releases and to accumulate layers of flavour over 40 years. The bottle is presented in a handmade jesmonite box with subtle markings on each so they’re unique and unable to be replicated.

Released in 2016, King Christian 1 is a rare limited edition within The Warrior Series, a collection of single malts created for Duty-Free to both introduce a key figure from Orkneyas Viking history, and to demonstrate the impact of cask type on our whisky flavour, which is immense.
Released in 2016 as part of The Warriors series, this is named after King Christian I of Denmark who re-established the Kalmar union.
Christian I was King of Norway, Denmark, Sweden (1448-1481)
This Highland Park bottling celebrates King Christian I of Denmark and his important role in the Orkney Islands becoming part of Scotland in 1468. He was a clever and cosmopolitan sovereign who managed to unite Denmark, Norway and Sweden, a region that at the time, included the Orkney Islands where our world renowned distillery has been based since 1798.
One of the rarest bottles of the Highland Park range in modern times, only 300 bottles of the King Christian Volume 1 have been released for the travel retail market. It was released in Feb of 2016 as part of the Warrior series.
This expression has been matured in both refill butts and hogsheads of “exceptional age”.
Matured in a combination of refill butts and hogsheads of exceptional age and character, this whisky, like its namesake king, is the embodiment of unity. The flavours of honeycomb, sun-drenched tropical fruit, and heady spices all interplay with swirls of aromatic peat smoke.
Only 300 bottles were produced, and, inspired by Nordic glassware, this rarity is presented in a crystal teardrop-shaped decanter, cradled in an exquisite silver spiral, and corked with an elegant silver stopper that carries the marquetry of the Viking warrior. The bottle is packed in a polished black lacquer box and comes with a book that both tells the story of King Christian’s harmonious reign and of Highland Park’s Viking roots.
