Sparkling wine is a wine with significant levels of carbon dioxide in it, making it fizzy. Freixenet produces its sparkling wines in the traditional méthode champenoise, aging Carta Nevada Brut for nine months in the ‘cavas,’ the caves from which they take their name. Embracing double fermentation, the second fermentation takes place in the bottle as the wine ages on the lees. Through the process, Freixenet sets the stage for a generous mousse and continuous stream of fine bubbles upon opening.

Luc Belaire Rosé is a popular sparkling wine produced in the Provence-Alpes-Côte d’Azur region of France, made with three varieties of grape – Grenache, Cinsault and Syrah. Luc Belaire say that these three varieties were chosen, as each bring something special to the sparkling wine. The Grenache adds body to the wine, as well as dark fruit notes, the Cinsault brings delicate, floral touches to the table and the Syrah delivers a well-rounded flavour profile with some toasty hints.
The growing areas for Asti (Piedmont) are difficult areas in which to grow vines. High on the hillsides the vineyards are small, steep and labour intensive. But their unique climate is perfect for the aromatic freshness we need. Machines can not easily operate here and harvesting is nearly always by hand.
In 1895, Federico Martinotti, invented a new method to create Spumante.
