Cognac is a variety of brandy named after the town of Cognac, France. It is produced in the surrounding wine-growing region in the departments of Charente and Charente-Maritime.
Cognac production falls under French appellation d’origine contrôlée designation, with production methods and naming required to meet certain legal requirements. Among the specified grapes, Ugni blanc, known locally as Saint-Emilion, is most widely used.The brandy must be twice distilled in copper pot stills and aged at least two years in French oak barrels from Limousin or Tronçais. Cognac matures in the same way as whiskies and wines barrel age, and most cognacs spend considerably longer “on the wood” than the minimum legal requirement.
Brandy is a spirit produced by distilling wine. Brandy generally contains 35–60% alcohol by volume (70–120 US proof) and is typically drunk as an after-dinner digestif. Some brandies are aged in wooden casks. Others are coloured with caramel colouring to imitate the effect of aging, and some are produced using a combination of both aging and colouring. Varieties of wine brandy can be found across the winemaking world. Among the most renowned are Cognac and Armagnac from southwestern France.
In a broader sense, the term brandy also denotes liquors obtained from the distillation of pomace (yielding pomace brandy), or mash or wine of any other fruit (fruit brandy). These products are also called eau de vie (which translates to “water of life”).

Hine Rare VSOP is a blend of Grande and Petite Champagnes (60% is the former). This is what’s known as a Fine Champagne. The cognac is aged from between 6 and 12 years, with most being around 8 years old. It is a stunning cognac with an excellent delivery. It was first blended by the eponymous Thomas Hine.
Tasting Notes Eye: Deep amber tones – a sign of aromatic complexity. Nose: We notice some tobacco notes, sweet fruit, well balanced – on the nose. Wood and cinnamon enlighten the nose. A grape brandy from Cyprus made with Cypriot Xynisteri grapes that’s aged for at least 15 years. It takes its name from a banquet that took place in London in 1363 at which the illustrious guests (the Kings of England, France, Scotland, Denmark and Cyprus) were served brandy that their host Mayor Henry Pickard had shipped over specially from the Troodos mountain range in Cyprus.

The Saint-Vivant Armagnac has a rich tradition dating back to 1559, when Saint-Vivant de la Salle produced the first bottle. The famous bottle “twisted” reproduces the original bottles used by Saint Vivant. The house uses Saint Vivant wines selected exclusively from the region of Gascony. These wines are distilled in traditional copper stills, and the resulting alcohol is aged in oak casks. The cellar master of Saint Vivant then starts the complex process of mixing the various distillates aged in order to get the final blend that makes this brand one of the most respected Armagnac in the world.

This right here is a rare bottle of St. Vivant VSOP Armagnac. The unique bottle shape is said to mimic those used by St. Vivant when he made Armagnac back in the 1500s. It’s very interesting, to say the least.
A special 30 year old brandy from Torres, named for the founder of the House, Jaime Torres Vendrell. It’s a blend of brandies from their oldest soleras, including Parellada wines originally destined for the Torres 10 aged for an extra chunk of time and a small amount of their rare 1972 Folle Blanche eaux-de-vie.
