Single Malt from the Highlands takes on many shapes and forms. Because the region is so vast it is difficult to make sweeping statements. The most popular Highland single malt (not including the Speyside region, which is situated in the Highlands) – is Glenmorangie. Typically, single malt from the region is put into four subregions, named for the cardinal compass points. To the north there are big bodied single malts, with cereal sweetness and richness, take The Dalmore, for example. Toward the south there are lighter, fruitier whiskies with a definite dryness. Aberfeldy is a shining example of this. To the east there are some full-bodied, dry whiskies with lots of fruit and pungency. The superb Glen Garioch is one such single malt distillery. The Western Highlands offer full body and real power with peaty, smoky overtones, nearer the coast there are some more maritime flavoured whiskies too including malts from Clynelish and Pulteney.

Definitive single malt whisky maker, The Dalmore, is releasing a refined new single malt, The Dalmore 45, to add to its exceptional collection.
The Dalmore 45 has been hand crafted by Master Distiller Richard Paterson who has used some of the distillery’s rarest aged liquids to create what Richard himself has described as ‘flawless perfection’.
Initially matured in American white oak ex-bourbon casks, the liquid has then been transferred into two different Vintage Graham’s Port Colheita pipes dating from 1961 and 1963 to create layers of flavour, which are indulgent, smooth and complex.
For its final flourish the whisky was then married together in first fill American white oak ex-bourbon casks providing The Dalmore 45 with a truly unrivalled finish. The Dalmore’s use of multiple casks is a fitting example of the distillery’s commitment to exquisite cask curation, which focuses on sourcing and utilising only the best casks from the world’s finest bodegas and wineries.
Purposefully retained at 40% ABV, The Dalmore 45 features exquisite flavours of red berries, soft liquorice, crushed hazelnuts, bitter chocolate and Manuka honey. This is followed by the sweet flavours of sticky toffee pudding, Bramley apples and juicy dates to finish.
Richard Paterson commented: “By personally selecting the very finest American white oak ex-bourbon casks and Port Colheita Pipes from 1961 and 1963, I have been able to create a truly unique expression which is indulgent and smooth with a vibrant and lively flavour profile. Dalmore 40 Year Old 2017 Release (70cl, 40%)

The 2017 release of Dalmore 40 Year Old was aged in bourbon casks for around 30 years, then aged in oloroso-sherry butts for a further seven before being finished in first-fill bourbon barrels. The result is a whisky with notes of gingerbread, maple syrup, honey and brioche.
A 2017 bottling of Dalmore 40 Year Old, presented in a Baccarat decanter. This was initially aged in American oak bourbon barrels before being transferred over to Matusalem Oloroso Sherry butts for seven years, and then transferred into first-fill bourbon barrels. This release coincided with Master Distiller and all-around good egg Richard Paterson’s 50th year in the whisky industry.
Wow – this Highland malt is something else. 40 years young and aged in a combination of American white oak, Matusalem oloroso sherry and Amoroso sherry casks, it bears the hallmarks of master blender Richard Paterson, who put his Midas touch to the blend. Scents of sherry, smoke and marmalade: a masterpiece.

50 year old Glenglassaugh single malt. Goodness gracious. This was distilled in November 1965 and matured in a single hogshead until November 2016, when the distillery in the Highlands bottled it up as the oldest expression in their Rare Cask Release Batch 3. 285 bottles were produced.
It warrants saying again. 50 year old Glenglassaugh single malt. Goodness gracious indeed.

Cask 2230 was filled all the way back in December 1968 and cracked open in November 2016, with 404 bottles produced. Batch 3 of the Glenglassaugh Rare Cask Release features whiskies all aged for at least 30 years. Blimey.

In 2013 Dalmore extended their core range of stunning whiskies with the Dalmore 25 Year Old. As a distillery that has a history of using an intricate selection of maturing methods, the 25 Year Old continues that tradition. First, it matured in American white oak cask. Glenmorangie have kicked off their Bond House No.1 series of vintage expressions with an absolutely stonking 1990 vintage single malt! This terrific tipple was distilled right when everyone realised that the year 2000 might actually happen, and left to age in a combination of ex-bourbon and ex-Sherry casks for quarter of a century before being bottled at 43% ABV. The distillers in the Highlands figured that a whisky as smashing as this needed a rather handsome bottle too, which is always a treat.
In his Whisky Bible 2017, Jim Murray gave this a massive 94 points (earning a Liquid Gold Award), and also took home a Double Gold Medal at the San Francisco World Spirits Competition 2017!

And on it goes with the Bond House No. 1 Collection, in which exclusive vintages are released: Following the Glenmorangie Grand Vintage 1996, the sixth edition, the Glenmorangie Grand Vintage 1997 now was presented.
The basis for the 23-year-old Highland Single Malt is whisky, which was initially matured for 10 years in ex-Bourbon casks before spending the next 13 years in ex-red wine barrels from Château Montrose from the appellation Saint-Estèphe, Bordeaux. During this time it developed extraordinary dark berry fruit flavors, as the latest press release from Moet Hennessy reports.
The vintage bottling was rounded off by the combination with whisky, which was matured exclusively in ex-Bourbon casks, and with whisky from ex-Oloroso sherry casks. And we read as well about “further, secret casks” …

Rich complex flavours from the slowest stills in Scotland, matured in the finest casks and Unhurried since 1833, we control the entire six year journey our oloroso sherry casks take from oak forest to highland distillery.
Brown sugar, dark chocolate and a hint of vanilla with an endlessly warm finish bursting with rich sherry notes. Matured in our slowly crafted sherry oak casks for at least a quarter century.

Royal Lochnagar distillery is based on the Abergeldie Estate in Royal Deeside, Scotland, close to the mountain Lochnagar.
The first Lochnagar distillery was burnt down in suspicious circumstances in 1824 and a replacement again burnt down in 1841. In 1845 John Begg built the “new” Lochnagar. The distillery was awarded its Royal Warrant in 1848 when John Begg invited Prince Albert to visit the distillery from the nearby Balmoral Castle, the Queen’s residence in the Highlands. The next day the distillery was visited by Queen Victoria, Prince Albert and their children.
Today Royal Lochnagar is owned by Diageo, and the distillery produces a relatively small amount of whisky, most of which is used in Johnnie Walker black and blue label.

A 2003 single malt from the second release in the annual Dalmore Vintages series, combining the very finest casks from 2003 to create a rich, sweet limited-edition whisky. Beginning its journey in American white oak ex-bourbon barrels, it was then transferred into a combination of Rivesaltes sweet wine casks, Matusalem and Amoroso sherry casks, and bourbon barrels, before being married together and bottled in 2022. Aromas of Manuka honey and vanilla pods mingle with sticky toffee on the nose, complemented by notes of maple syrup, baking spices, plums, blackberries, English marmalade and honey throughout the palate and lingering in the finish.

The Glen Garioch distillery may well be Scotland’s first licensed distillery. Varying dates are given as to the founding of the distillery, but all are predated by an article in the Aberdeen Journal on the 1st December 1785, which announced the first distillation of spirit at the site. This is OLD SCHOOL Glen Garioch, distilled in 1988, from when the distillery was floor malting their own malt, and using Highland peat. Bottled by That Boutique-y Whisky Company for its Cinema Series.

The 2007 discovery of whisky left in Antarctica by Sir Ernest Shackleton during his famous expedition in the early 1900s led to Richard ‘The Nose’ Paterson using all his skill and experience to recreate this historic whisky, raising £250,000 for the Antarctic Heritage Trust in the process.
Approached by the charity and Alexandra Shackleton (Ernest’s grand-daughter) to produce a second edition of his blended malt to coincide with Tim Jarvis’ Shackleton Epic (the first authentic re-enactment of Shackleton’s extraordinary Antarctic survival journey of 1916), how could Paterson refuse?
Digging out another rare cask of Glen Mhor (an even older one, this time from 1980), as well as some heavily-peated Dalmore(!), he once again recreated the Shackleton whisky, also using malts from Glenfarclas, Mannochmore, Tamnavulin, Ben Nevis, Aultmore, Fettercairn, Pulteney and Jura.
The resulting masterpiece of blending offers something different, whilst clearly coming from the same lineage as his first lovingly recreated malt. A new and critically-acclaimed interpretation of a truly classic whisky.

If you haven’t seen the show, essentially The Night’s Watch hold and guard the Wall, an immense ice structure which separates the northern border of the Seven Kingdoms from the lands beyond. If you’re not very familiar with Oban, it’s a whisky producer in the Highlands that sits on the edge of Scotland’s western coast that’s known for its clean and intensely fruity Scotch. In our opinion, both provide equally important services. One protects the realm from raiders and worse (no spoilers, people), while the other makes very tasty whisky for us to drink. The 18 Years Old is a single malt Scotch whisky of serious distinction. Once it has spent fifteen years maturing in American white oak casks approximately 30% is transferred into Spanish Oloroso casks to spend a further three years maturing. Then, when both elements have reached 18 years, we blend them back together to create a whisky with a rich bouquet and full, rounded flavour. For a whisky of this age this expression has maintained, thanks to our delicate floral spirit and fine Oloroso casks, an incredible degree of vibrancy where the raisiny sweetness of the sherry has been toned down by the nuttiness of the American oak.

A 2020 release from Dalmore that takes a maximalist approach to cask finishing.
Indeed, this dram is part of a mini series of three whiskies from the Highland distillery. Each expression in this series showcases Dalmore’s spirit in an increasing number of cask finishes, with the Trio being finished in three casks, the Quartet in four, and the Quintet in five.
Dalmore Quintet has been finished in rare muscatel casks, Malmsey Madeira barrels, 30 year old matusalem sherry casks, 10 year old port casks and Cabernet Sauvignon casks from Bordeaux.
The result is an exceedingly rich and complex whisky, which serves up notes of pineapple, mango, bananas, maple syrup, espresso, dark chocolate, rich dried fruits, plums, marmalade, white grapes, malt, vanilla custard, rancio, old oak and leather.
A whisky that illustrates sometimes, more is more!
The dram is bottled at the higher proof of 44.5% ABV for extra body and depth.
