Rum is a distilled alcoholic drink made from sugarcane by products, such as molasses, or directly from sugarcane juice, by a process of fermentation and distillation. The distillate, a clear liquid, is then usually aged in oak barrels.

The majority of the world’s rum production occurs in the Caribbean and Latin America. Rum is also produced in Australia, Portugal, Austria, Canada, Fiji, India, Japan, Mauritius, Nepal, New Zealand, the Philippines, Reunion Island, South Africa, Spain, Sweden, Taiwan, Thailand, the United Kingdom and the United States.

Rums are produced in various grades. Light rums are commonly used in cocktails, whereas “golden” and “dark” rums were typically consumed straight or neat, on the rocks, or used for cooking, but are now commonly consumed with mixers. Premium rums are also available, made to be consumed either straight or iced.

Trinidad Distillers 2006 Transcontinental Rum Line

Trinidad Distillers is the production facility for the Angostura brand. It was built by the company in 1947 to produce rum for its world-famous bitters, in addition to distilling bulk product for export. The distillery’s original set up was a single Savalle column still, however this was replaced with a five-column still in 1975, following investment from Bacardi who required more bulk rum. Two more of these multi-column stills were added in 1985 and 1999. Some experimentation briefly took place with a Vendome pot still in the early 2000s as well, however this was quickly sold to St Lucia Distillers by their shared parent company at the time, CL Financial. The company was forced to divest much of its rum portfolio following the financial crash in 2007, but retains a majority stake in Angostura after it was bailed out by the local government to prevent what it felt was a national treasure being lost to foreign ownership. Trinidad Distillers remains one of the largest rum distilleries in the Caribbean, producing around 8.5 million litres per year.

A 9 year old was distilled in 2006 and bottled in 2018 by La Maison du Whisky after 7 years tropical and nearly 5 years continental ageing.

This is a pure single rum from the South Pacific distillery pot stills, and was 35% aged in continental weather, spending 2 in the tropics and one more in Europe.

The South Pacific distillery is located in Lautoka on the island of Fifi and began production in 1980 in order to reduce their need for imported spirits like whisky and gin. The decision to make rum in addition was logical given the country had an active sugar industry to provide it with molasses. Today it is a subsidiary of the Australian brewer, the Fosters group, who bought the Willowbank distillery in New Zealand from Seagram in 1997, moving its pot stills to South Pacific the same year. In addition, rum is also distilled on a three-column continuous still.

From Trinidad’s Tencane distillery, this 14-year-old pot distilled rum joins the Cinema Series from That Boutique-y Rum Company. Distilled from pressed sugarcane juice, the rum originally matured in Trinidad and Tobago, before being transferred to Barbados, and finally ending up in the UK. A richly oaky, tannic sipper, balanced with plenty of jammy dried fruit tang.

A superb 17-year-old multi-column still rum from Trinidad Distillers Limited. Nowadays, rum in Trinidad is produced by one large-scale producer, but that wasn’t always the case. The story goes that the Fernandes brand was responsible for creating one of the most iconic bottlings of days gone by, from casks salvaged from a fire-damaged warehouse. Once the initial bottles ran out, the challenge of making more arose, so a number of different blending marques were used to recreate the correct profile. This right here is one of those blending marques, it’s a heavy-column rum that would likely have only been used in small amounts in the original blend, but here’s the opportunity to try it untouched, in all its long-aged glory, thanks to That Boutique-y Rum Company.

A classic British Navy style rum, Pusser’s Gunpowder Proof rum has rich notes of treacle, toffee, honey and vanilla throughout the palate, alongside oak, cinnamon and ginger. Taking its name from the naval tradition of providing sailors a daily ration of rum, distributed by the Purser – or Pusser. The Pusser would dispel any complaints of watering down the rum by wetting a pinch of gunpowder with the rum and attempting to light it. If the mixture ignited it was “proof” that the rum was strong enough.

Master blender Alexandre Gabriel created the Xaymaca (pronounced zay-muck-uh) brand, which is the original name for Jamaica that the indigenous Arawaks, who inhabited Jamaica well before Columbus set foot on the island in 1494, gave it. Xaymaca actually means ‘land of wood and water.’
