Vineyard
From the privately owned arcadian vineyard at Melissopetra with a unique slate soil composition. Yield is very low at 360 kilos of grape per 1.000 sq.m. and harvesting begins in early September.

Wine and Wine-making
The grapes are crushed in pneumatic presses, clarified and fermented in stainless tanks with controlled temperature (13^o-16^o C) for up to 20 days. Skin contact at 10^o C for 8 hours.
