VINIFICATION
Freixenet produces its sparkling wines in the traditional méthode champenoise, aging Carta Nevada Brut for nine months in the ‘cavas,’ the caves from which they take their name. Embracing double fermentation, the second fermentation takes place in the bottle as the wine ages on the lees. Through the process, Freixenet sets the stage for a generous mousse and continuous stream of fine bubbles upon opening.

The 2016 Guidalberto (Cabernet Sauvignon and a smaller percentage of Merlot) opens to a full and generous bouquet and a beautifully rich and velvety appearance. This edition of Tenuta San Guido’s mid-level wine offers a bigger aromatic profile, more texture and more volume as well. Dark cherry and blackberry segue to spice, tar, leather and sweet fruit at the end. The mouthfeel is elegantly shaped, silky and nuanced. This may well be the best vintage of Guidalberto I have yet to taste—and you can get this wine at a great price too.

Higher elevation vineyards did enjoy some cooling breezes overnight giving some relief to the grapes and balance to the wine. This example is intense with dark fruit, clove, anise, dark cherry, grilled wild herbs and smoky flavours on the palate with balanced acidity to match. Pour with a meat-lover’s pizza.

Vinification and ageing: Such a regular climate trend meant that the grapes could be harvested by hand without any particular difficulties, undergoing a thorough selection process on the sorting benches once they reached the cellar. Fermentation was carried out in stainless steel tanks at a controlled temperature, with frequent pumping over, especially during the early stages. The wine was then aged in large wooden barrels, where it was able to mature and become more refined until it achieved perfect harmony. CastelGiocondo Brunello is only ready to be placed on the market 5 years after the harvest and following further ageing in the bottle
