The final release in the Billy Walker 50th Anniversary collection from Glenallachie, this young, feisty single malt represents Billy’s future endeavours. Made with Speyside peat from St Fergus and matured in a combination of ex-bourbon, ex-rye whiskey and virgin oak casks for four years, it was bottled in August 2022 and marks the first single malt that Billy has overseen from start to finish since he became master distiller in 2017. Aromas of toasted honeycomb, dried fruits, hazelnuts, dark chocolate, smouldering oak and cinnamon apples fill the nose, complemented by notes of stewed pears, toasted almonds, heather honey, vanilla toffee, smoked barley and ripe apples throughout the palate.
The third and final installment of GlenAllachie’s Past, Present and Future Series, celebrating master distiller Billy Walker’s 50 year career in the whisky industry! The series ends in style, with this Future Edition, GlenAllachie’s first peated single malt, perhaps giving us a hint at what to expect from the distillery in years to come. Produced from the first spirit distilled under Billy Walker’s ownership of the distillery, it was matured for four years in a selection of ex-rye, ex-bourbon, and virgin oak casks and bottled up at a hearty 60.2% ABV.

Balvenie 14 Year Old Peated Triple Cask is a whisky with a bit of a backstory! In the 1950s, Balvenie distilled a batch of heavily peated malt, unlike other Speyside distilleries at the time. In the early 2000s the distillery started experimenting to recreate that same peated malt and since then, they have dedicated one week each year, aptly-named Peat Week, to using only peated barley in its production.
This peated expression was originally released for the Travel Retail market. It was aged for 14 years in three cask types – first-fill bourbon, refill bourbon and sherry cask. The resulting whisky is sweet, smoky and full of spices.

This is a limited-edition single malt Scotch whisky from The Balvenie Distillery, available in a 70cl bottle ready for gifting.
The Week Of Peat story begins with distillery manager Ian Millar’s eagle eye spotting a weeks gap in the distillery schedule. Eager to experiment with The Balvenie profile using what he had learnt from a recent trip to Islay, he ordered a batch of Speyside peat for the kiln and built a peat burner on the side “for, well, extra peatiness”. The whisky produced is rich in honey, vanilla and citrus notes with an extra layer of delicate smoke.
The Balvenie Distillery is built on age-old traditions and stories which are passed on from one generation of craftsmen to the next. The Balvenie Stories are a range of exclusive single malt whiskies, each representing tales of character, endeavour and craft.

Those of you who are all up to date with Game of Thrones lore (and if you aren’t, beware of spoilers ahead!) will remember that there were in fact, seven kingdoms in Westeros, but in the season finale the North became independent, taking the number down to six. The Speysider was matured in first-fill sherry casks, with a finish in American oak bourbon casks. The limited edition single malt is bottled at 46% ABV, presented in a metallic gold presentation tube, decorated with a pen and ink drawing of the mysterious three-eyed raven (aka Bran the Broken). Far in the North of Westeros lies the home of House Stark, a noble family whose lords served as King in the North for generations. A proud and loyal family, the Starks were true to those they swore allegiance to – First House Targaryen and later House Baratheon. However, every noble family has a vulnerable side, and the Starks are no different. Living in the North they are often caught with a warning passing their lips: Winter is coming. Like House Stark, Dalwhinnie distillery are northerners through and through. One of the highest and coldest distilleries in Scotland, the extreme weather and cold temperatures experienced at Dalwhinnie are reflected in the fact that this single malt is best served chilled, or over ice, to highlight its signature honey and spice characteristics.
Aged in ex-bourbon casks, this light gold single malt gently opens to flavours of honeyed figs and delicious malt balls, finishing with rich fruitcake sweetness. Like House Stark, Dalwhinnie Winter’s Frost is loyal to the flavour profile that the distillery is known for, and not only survives the cold of winter, but uses it to its advantage.

Matured in a mixture of former Bourbon American white oak barrels and Oloroso sherry casks, both of which are reassembled onsite by Glenfiddich’s high skilled coopers, this whisky possesses fabulous balance.
After 18 years of maturation, the effects of the cask are highly apparent on the palate, with both rich vanilla from the Bourbon barrels and dried fruit and spices from the Oloroso cask. Nevertheless, the spirit maintains the classic apple, pear and warm malt flavours that have come to be the trademark of Glenfiddich.
The whisky is bottled in modern rendition of Glenfiddich’s classic triangular bottle shape. With a soft mouthfeel and excellent complexity, this would make a great luxury option of any fans of this mighty distillery.

Renowned for his Sherry cask maturation expertise, Billy hand-picked this Oloroso Puncheon (2007 #800179) to be bottled. A drier style of Sherry wine originating from Jerez, a city in the Spanish province of Cádiz, Oloroso offers nuttier flavours, with dried fruits and warm spices. This particular Puncheon has imparted notes of toasted walnuts, dark chocolate tart and winter spices to the 15-year-old spirit held within.

Distilled in 2001, this 19-year-old Singleton of Glendullan single malt was initially matured in refill American oak casks and finished in ex-Cognac casks before being bottled as part of Diageo’s 2021 Special Releases. White Heather 21 Year Old is made with whiskies from Speyside, the Highlands and Islay, aged in first-fill American barrels, sherry butts, and second-fill barrels and hogsheads. The blend also enjoyed three years of additional maturation in Pedro Ximénez puncheons, Oloroso puncheons, and Appalachian virgin oak casks. The name comes from a blended whisky brand that was discontinued back in the 1980s, which was acquired by The GlenAllachie Distillers Company in 2017.
