Prosecco is an Italian DOC or DOCG wine produced in a large area spanning nine provinces in the Veneto and Friuli Venezia Giulia regions, and named after the village of Prosecco. It is made from the Prosecco grape (renamed Glera in 2009 within the European Union), but denomination rules allow up to 15% of the wine to be a blend of several other permitted varieties. Prosecco is almost always made in sparkling or semi-sparkling styles (spumante and frizzante, respectively), but still white wine (tranquillo) is also permitted. Prosecco Superiore is made under two smaller DOCG designations, where only the sparkling spumante style can be labelled superiore: Conegliano Valdobbiadene Prosecco DOCG, which can only be made in the hills between the towns of Conegliano and Valdobbiadene north of Treviso, and the nearby smaller Asolo Prosecco DOCG produced near the town of Asolo.

It’s been 50 years now and that little piece of carbon still represents the forbidden dream of many women and men around the world. White, black or fancy…does not matter … what really counts is that it is big and shining. Yes, I said men ..no mistake.. we live in a time when many stereotypes have been defied and many generational gaps bridged: in the world of fashion, women love to wear men’s clothes, discovering that they can use the same dresses while remaining different and the same is true for men; in the world of wine, sparklings have matched the taste of both women and men, overcoming the old prejudice which saw the former drinking only white wines and the latter exclusively red ones; nowadays not only older men hang out with younger women, but also women do the same with younger boys.

In 1895, Federico Martinotti, invented a new method to create Spumante. By creating the secondary fermentation in a closed and sealed vat he found a way not only to make wines of consistently high quality, but also a way to do it more quickly in order to preserve the natural freshness of the grapes. The process is now: grapes to fermentation, secondary fermentation to bottle.

This classic from the North of Italy is a delicious sparkler with aromatic pear flavours on the nose followed by a crisp palate of succulent apple and pear. Gently foamy, with a crisp and delicate finish, drink on it’s own or in true venetian style, as a Bellini.
The Cielo’s family estate based in Friuli Grave DOC is the source of these top quality white wines. Planted with Prosecco, Pinot Grigio, Friulano and Sauvignon Blanc, the fruit concentration balanced with crisp, refreshing acidity demonstrate why many believe that this area is Italy’s finest for the production of white wines.
