Greece is one of the oldest wine-producing regions in the world and among the first wine-producing territories in Europe. The earliest evidence of Greek wine has been dated to 6,500 years ago where wine was produced on a household or communal basis. In ancient times, as trade in wine became extensive, it was transported from end to end of the Mediterranean; Greek wine had especially high prestige in Italy under the Roman Empire. In the medieval period, wines exported from Crete, Monemvasia and other Greek ports fetched high prices in northern Europe.

It is produced by fermenting and ageing Santorini’s Assyrtiko grape in oak barrels from Nevers and in acacia casks from Southern France. The fermentation is carried out in 225lt new French oak casks from Nevers. After fermentation, the young wine is aged “sur lie” (on lees) in the same casks for 4-5 months.

From the privately owned arcadian vineyard at Melissopetra with a unique slate soil composition. Yield is very low at 360 kilos of grape per 1.000 sq.m. and harvesting begins in early September.

Wine and Wine-making
The grapes are crushed in pneumatic presses, clarified and fermented in stainless tanks with controlled temperature (13o-16o C) for up to 20 days. Skin contact at 10o C for 8 hours.
