Bishop’s Gin takes its name from Englishman John Ponet, Bishop of Rochester and then Winchester in the 1550s. A reformer who questioned the divine right of kings and fought for religious freedoms, for example, he was controversial thinker in his time. His Belgian descendants would go on to found the Ponet distillery, in Hasselt 1763 and now in the 21st century Thierry Ponet is reviving the spirit of both. Beefeater 24 (70cl, 45%)
A more recent addition to the Beefeater range. When creating Beefeater 24, Desmond Payne knew he had to come up with something totally different for his selection of botanicals. He used tea! The 12 ingredients used are Japanese Sencha Tea, Chinese green tea and then Seville orange peel, grapefruit peel, lemon peel, juniper, coriander seed, liquorice, angelica root, almond and orris root. It is called Beefeater 24 because the botanicals are steeped in the spirit for a full 24 hours. The result is a fragrant gin with good sweetness.

The word “barrister” comes from the English word “bar”, it is the barrier that separates the judge from the defendant. This is the highest rank of lawyer in Britain. From the fifteenth century, prisoners could instruct “a cultured and eloquent friend” to protect their interests. The lawyers had access to the “judicial bar”, so they could be heard by the court in the interest of their client. The lawyer’s speech in court is precise and sharp as a blade. In England it is said that the gin is “cold like steel”-due to the strong cold aftertaste.
