The Cotswolds Distillery was founded in 2013 by Dan Szor in Stourton in the heart of the Cotswolds, inspired by his passion for single malt whisky. Making their home in an old barn conversion, Dan had his stills build by Forsyths in Rothes – the wash still is named Proud Mary and the spirit still is named Janis. The first release from the Cotswolds Distillery was Cotswolds Dry Gin, which made its way to our shelves in late 2014. A few years later, in 2017, the very first whisky from the Cotswolds Distillery (as well as the very first single malt whisky distilled in the Cotswolds) was released – and has been very well received, picking up a Gold medal at the World Whiskies Awards 2019 and a Liquid Gold Award in Jim Murray’s Whisky Bible.

Our Cotswolds Bourbon Cask Single Malt Whisky is created from select first-fill ex-Bourbon casks in which our rich and fruity single malt spirit has been patiently matured. These premium American oak barrels are ideal for ageing whisky and impart delicious notes of vanilla and honey. This sweet and malty cask strength expression is a whisky for purists and a wonderful expression of our distillery character.

Like its predecessor, the 2019 edition Founder’s Choice spent its time maturing in American oak red wine casks that were shaved, toasted and re-charred, following a process that was created by Dr. Jim Swan. Following maturation, this tasty treat gets bottled up at cask strength, letting all those malty, fruity, toasty flavours sing. 2,500 bottles were released in this batch.

Our smooth and elegant Cotswolds Reserve Single Malt Whisky is hand crafted in small batches using 100% locally grown, floor malted Cotswold barley. This expression showcases the influence of our first-fill ex-Bourbon casks which provide classic notes of vanilla, honey, butterscotch and a hint of coconut, resulting in a truly smooth and well-balanced dram. A touch of whisky from our wonderful STR ex-red wine casks has been blended in to enhance the richness, fruitiness and sweetness of this remarkable whisky.
