The Isle of Raasay distillery is open for business (as we discussed in our blog post on the subject), but there’s still waiting to be done – their whisky needs time to mature. While we wait, why not try their theird release of While We Wait, a lightly peated single malt from an undisclosed distillery. The first release was finished in Tuscan wine casks for 8 weeks and the second release was finished in Tuscan wine casks for 18 months – the third release, however, is a combination of those two finishes!
