The whisky is matured entirely in sherry casks, with predominantly first-fill European oak sherry casks forming its character. Glengoyne’s casks undergo lengthy preparation: the oak is air-dried, coopered and toasted before being seasoned with Oloroso sherry. This creates the deep fruit, leather, brown sugar and mature spice associated with the 25 Year Old.
