Edrington has added another ultra-premium extension to The Macallan’s portfolio, this time unveiling a 30-year-old single malt Scotch whisky.
Sitting in the brand’s ‘Double Cask’ series, the single malt consists of liquid matured in both Sherry-seasoned American and European oak casks. The Macallan Double Cask 30 Years Old joins the ‘gold’, 12-, 15- and 18-year-old expressions in the series.

Acclaimed photographer and artist Erik Madigan Heck was inspired by nature and the landscape of The Macallan Estate when capturing the complex flavour of The Macallan Double Cask 30 Years Old.
The whisky itself is a rich and luxurious medley of flavour, and Erik Madigan Heck used natural light to capture this depth of character in his still life. The reflective surface enhances the idea of flavours blending– almost as if seamlessly merging together as one – with the soft focus echoing the long-lasting taste experience.
The whisky’s golden acorn natural colour is the focal point of the shot. Its rich tone and translucent glow has influenced the colour palette of the piece as a whole, with the soft caramels and browns and pops of red and green once more showcasing the depth of its flavour profile.

Aromas of orange blossom, Maraschino cherries, espresso, honeysuckle, hazelnuts, lavender, cinnamon and peaches fill the nose, complemented by notes of dark chocolate, redcurrants, sugared almonds, burnt coffee beans, orange zest, ginger, liquorice and blackberries throughout the palate and lingering in the finish.

The Meikle Tòir range (meaning ‘big pursuit’ and pronounced mee-kuhl tor) comprises peated whisky made at GlenAllachie Distillery with guidance from legendary master distiller Billy Walker. The Original is a single malt made with mainland peat from St. Fergus, a sweeter, grassier variety than found on the coast. The barley was peated to 35ppm and then the whisky was aged in a combination of first-fill bourbon barrels, American virgin oak casks, and rye barrels. Dalmore 12 Years Old Sherry Cask Select combines Dalmore’s house style with a delicious sherry influence. The single malt first aged for 10 years in American white oak ex-bourbon barrels. It was then finished in Oloroso and Pedro Ximénez sherry casks from three historic cooperages in Jerez de la Frontera, creating a sweet and elegant character. The whisky has aromas of caramelised orange, ginger and sultanas, laced with honey. The palate brings dark chocolate and crushed almonds with a dusting of cinnamon. An Indian single malt whisky from the Paul John distillery, located in tropical Goa. Paul John distillery uses six row barley that is sourced from foothills of the Himalayas. The high fibre and protein content in six row barley, offers a distinct tannic character to the spirit. The tropical climate for maturation means a high angel’s share, 8-10%, as opposed to Scotland’s 2-3%. After just six years of maturation, around 40% of the cask contents is lost to evaporation. That loss would take around 24 years in Scotland! A cracking addition to That Boutique-y Whisky Company’s Cinema Series, with a label that imagines James Bond, Bollywood style.

Thankfully, this one shows off a welcome harmony between the two. It’s a marvellous variation of Seaweed & Aeons & Digging & Fire, featuring the same smoky 10 year old Islay single malt, though instead of just 25% of it being finished in sherry casks, the entirety of the whisky was finished in them. The powerfully peaty notes at its core are mellowed by just enough sherry sweetness, making for a superbly well-balanced flavour profile.

It was the memory of entering a French pastry shop that prompted Glenmorangie head of whisky creation Dr Bill Lumsden to create the brilliant Glenmorangie The Nectar D’Or. It’s a single malt that was aged for 14 years in bourbon casks that was then finished for two more years in a new combination of great sweet white wine casks. Secondary Cask: European Sherry
After a while some Malt, Heather and Butter are coming through. And all the time there’s a faint Sherry like sweetness. The nose of the 12 Year is quite overwhelming but the 18 year is much more settled and ripe. Hardly any Wood which is remarkable for its age. Quite Nice.
Taste: The delivery is very smooth and slightly watery for a 43%. I think this expression should be bottled at 46%. Chocolate, Plums, Nuts. Sherried Peat Smoke in the background. Again hardly any Wood and very little Spices. The Peat is still there. Light Ashes. Well balanced.
Finish: Some Toffee is there, as well as slightly bitter Orange Marmalade. Some Wet Earth after a few minutes. After about 10 minutes it felt like having eaten a thin slice of Smoked Ham. I’ve added half a point to the finish for that. Remarkable!

Ledaig 10YO is neither a smooth nor elegant whisky, but it is crisp, engaging, complex, colourful, tasty and naughty, and that may not sit well with conservative whisky fans.
Ledaig single malt Scotch whisky is produced at the Tobermory Distillery, the only distillery on the picturesque Hebridean Isle of Mull.
Its name comes from the original name for the area, Ledaig (Led-chig), from the Gaelic, meaning ?safe haven?. Ledaig, unlike Tobermory, is distilled from heavily peated malted barley. During the malting process, burning peat is used to dry the barley in a kiln. The reek from the burning peat is absorbed by the barley through the husk of the grain, and the reek remains through the mashing, fermentation and distillation processes, eventually leading to a single malt with a highly distinctive peaty, smoky taste. The result is an intricate Island Malt Scotch Whisky. The 2011 revamp of Ledaig, with new packaging and a solidly peaty whisky. Good work from Tobermory.

In making Laphroaig, malted barley is dried over a peat fire. The smoke from this peat, found only on Islay, gives Laphroaig its particularly rich flavour.
