Highland Park 15 Year Old Viking Heart 70cl, 44%
Highland Park’s 15 Year Old Viking Heart has been made using predominantly sherry-seasoned European and American casks, as well as a few refill casks, bottled at 44% ABV. Well, I suppose we should say “ceramic decantered” rather than “bottled”, really. The decanters were made by Wade Ceramics, and inspired by the earthenware vessels that whisky would have been stored in centuries ago.
Glenrothes 40 Year Old Limited Release 2019 No. 059 70cl, 43%
Matured throughout its four decade tenure in a bourbon oak cask, this is a magnificently aged and truly delectable release from Glenrothes. The golden hue gives it an instant aesthetic appeal, but the true piece de resistance is the sweet honeyed flavour and complementary notes of vanilla and nutmeg.

- Macallan Edition No.3 – Released in 2017, this third edition has been created in conjunction with Roja Dove, a highly respected ‘nose’ in the perfume industry. No. 3 is a blend of 3 types of cask bottled at 48.3%
- Macallan Edition No.4 – The 2018 release was intended to celebrate the design and craftsmanship involved in the new Macallan distillery which opened that year. Packaged in green to evoke the turf covered roof of the spectacular new site. 48.4%
- Macallan Edition No.5 – Released in 2019, Edition No.5 was a collaboration with the Pantone Color Intitute and celebrated the natural colour of Macallan. 48.5%
- Macallan Edition No.6 – The final edition takes inspiration from the landscape around the distillery. The liquid has been matured exclusively in sherry-seasoned casks – a select combination of first and second fill American and European Oak. 48.6%

Bunnahabhain Canasta Cask Matured Fèis Ìle 2023 (70cl, 51.2%)
Canasta is a type of cream sherry produced by Williams & Humbert. It’s a rich medium sweet wine made from a blend of dry oloroso and sweet PX sherries. In short, it’s just the kind of thing you want seasoning your cask. This is a NAS (no age statement) release that has not been coloured or chill-filtered, and bottled at a nice healthy 51.2% ABV. As with most releases from Bunna, it is unpeated.
Deanston 21 Year Old 2000 Organic (70cl, 50.9%)
This limited edition single malt Scotch whisky from Deanston was made using organic malt and matured in organic ex-bourbon casks, before a finishing period in organic ex-fino sherry casks. At 21 years old, this Highlander is part of a limited annual release totalling 2,784 bottles. At a cask strength of 50.9%, non-chill filtered and with no added colouring, it’s a dram bursting with flavour, and an intriguing addition to the burgeoning category of environmentally conscious whiskies.

Springbank 21 Year Old Oloroso Cask Finish Darkness (50cl, 46.5%)
Those clever clogs over at Darkness got their hands on a sought-after drop of whisky here. This 21-year-old Springbank single malt was given the Darkness treatment with a finish in one of its custom-made octave casks, that previously held oloroso sherry. The coastal malt and sherried sweetness make a perfect partnership.
Highland 19 Year Old Oloroso Cask Finish Darkness (50cl, 54%)
The gang at Darkness hopped up to the Highlands for this smoky single malt and sized it up to be the perfect fit for a finish in one of their little oloroso sherry octaves. Matured for a total of 19 years, the small size of the octave cask used for finishing enabled more interaction between the liquid and the wood, in other words, more sherry and oak influence upon the deliciously peaty single malt.
Glenrothes 13 Year Old Oloroso Cask Finish Darkness (50cl, 59.9%)
Glorious Glenrothes single malt, matured for 13 years, including a finish in an oloroso sherry cask. Not just any cask mind, it was a teeny little octave cask from the Darkness vault. Smaller casks allow the whisky within to interact more with the wood, thus maximising all that sherry goodness.
Islay 13 Year Old Oloroso Cask Finish Darkness (50cl, 57.7%)
Hailing from an undisclosed Islay distillery, an intensely sherried single malt from Darkness! Matured for 13 years, there’s plenty of coastal peat smoke and classic bonfire character here, coupled with layers of fruity sweetness thanks to a finish in an oloroso sherry octave.
Craigellachie 12 Year Old Oloroso Cask Finish Darkness (50cl, 62.2%)
Hailing from the Craigellachie distillery, this single malt spent a dozen years maturing, including a finish in an oloroso sherry octave cask. Octave casks are smaller, thus allowing more interaction between whisky and wood for the time that they are full. They’re the cask of choice for Darkness, ensuring the intensely sherried character for which its range is renowned.
Caol Ila 14 Year Old Oloroso Cask Finish Darkness (50cl, 55.5%)
This Caol Ila single malt has been given the sherry cask treatment, courtesy of the crew at Darkness! Matured for 14 years, the whisky was treated to a finish in an oloroso sherry octave resulting in heaps of citrus and spice to support the earthy, peaty salinity at its core.
Campbeltown 8 Year Old Oloroso Cask Finish Darkness (50cl, 56.5%)
The folks at Darkness know their stuff when it comes to sherry cask finishing, ensuring its whiskies have reached the peak of perfection before cracking open their diddy little octave casks to bottle them up. The smaller casks ensure more contact between spirit and wood, which means more sherry influence for this blended malt Scotch from the Campbeltown region, which finished its eight-year maturation in an oloroso sherry octave.
Balmenach 9 Year Old Oloroso Cask Finish Darkness (50cl, 56.6%)
Much of the single malt produced at Speyside’s Balmenach distillery is destined for premium blends including the likes of Johnnie Walker… not this little gem though! This single malt joins the Darkness range of intensely sherried whiskies, having matured for nine years, including a finish in a single oloroso sherry octave cask. The smaller casks that Darkness uses allow more interaction between the wood and the whisky, so you can expect mouthcoating layers of sweet, nutty spice here.
Seaweed & Aeons & Digging & Fire 10 Year Old (70cl, 40%)
This right here is a 10-year-old single malt from an undisclosed distillery on Islay, with 25% of it having been finished in first-fill oloroso sherry casks, and bestowed the decidedly descriptive name Seaweed & Aeons & Digging & Fire. If those four words (and three ampersands) aren’t quite enough of an explanation of what this expression is all about, here are a few more: stripped-back, smoky, complex, a bit sherried, balanced, coastal. Yeah, that should do it. Great for people who love uncompromising Islay whisky and sans-serif fonts.

This is rare collectible flagon from esteemed single malt Scotch whisky producers, Glenfiddich. It features the likeness of Robert the Bruce, King of Scotland during the early 1300s, on its label. We reckon it produced in the 1980s.

Macallan Rare Cask (2023 Release) (70cl, 43%)
The 2023 release of Macallan Rare Cask is a rich, sweet single malt with a smooth, velvety texture. Aromas of vanilla, raisins, crunchy apples, lemon and orange fill the nose, complemented by notes of dark chocolate, citrus zesty, sweet raisins, vanilla and oak throughout the palate.
The highly anticipated 2023 Rare Cask release from The Macallan is a showcase of whisky from the finest sherry-seasoned casks. The casks have been selected as they bring a particularly complex, raisin-forward character to the Highland single malt Scotch whisky.

From a tiny distillery in Orkney, Scapa is often overlooked in favour of its more famous neighbour Highland Park. This 14yo was quite a shortlived bottling -it was introduced by then new owners Chivas Brothers to replace the old 12yo, but was subsequently superseded by the now-familiar 16 year old standard official bottling.

Kilchoman Cognac Cask Matured 2023 Release 70cl, 50%
unusual release from Kilchoman, this isn’t a finish, instead it’s entirely matured in 300 litre Cognac casks which come from Tonellerie Bossuet. Kilchoman used a 50ppm heavily-peated new-make spirit, which then went into 32 300 litre French oak casks for a minimum of six years. The result was bottled at 50% ABV with no colour or chill-filtering.
Kilchoman Casado 70cl, 46%
A limited-edition single malt from Kilchoman, Casado takes its name from the Portuguese word for marriage. Initially matured in 38 first-fill ex-bourbon barrels, it was then married in a pair of Portuguese red wine vats for two years before it was bottled. Aromas of intense campfire smoke, ripe plums, cherries, peaches, marzipan and sea spray fill the nose, complemented by notes of black pepper, salty peat smoke, apricot, lemon, stewed plums, apricot jam and rich smoke throughout the palate and lingering in the finish.
Kilchoman Fino Sherry Cask Matured 70cl, 50%
Something you don’t see everyday, an Islay single malt entirely aged in fino sherry casks. Kilchoman founder Anthony sourced 20 fino sherry butts from Bodega Jose y Miguel Martin in Jerez to mature his whisky in. This release spent a minimum of five years ageing before bottling in 2023 at 50% ABV. Fino, the lightest and freshest style of sherry, imparts quite different flavours to the more commonly seen oloroso or PX. So there will be no dried fruit or big spices here, thank you very much. Instead think of fresh apples, almonds and a salty note that perfectly compliments the smoky Kilchoman character.
Kilchoman Small Batch Release (70cl, 48.7%)
The excellent Kilchoman Small Batch Release is a limited edition whisky that uses the finest casks available for maturation. This exclusive small batch release includes some whiskies matured in ex-bourbon, ex-sherry and STR casks.
STR casks are an innovation not found in many distilleries and were created by the late Jim Swan. The abbreviation stands for ‘shaved, toasted and recharred’.
Each cask previously contained red wine, and to tame some of the overpowering red wine flavours, the casks are shaved on the inside to expose the active wood. This is then toasted to break down the harder oak elements such as cellulose. The barrel is then charred to create an active charring layer that improves the interaction with the maturing spirit.
The bottles were bottled at 48,7 % alcohol and no chill filtration or colouring was used in the production process. The whisky is presented in a gift box.

Back in 1998, we started seeing some of Dr. Bill Lumsden’s first experiments as that was the year he was appointed director of whisky creation. For this Grand Vintage Malt, the whisky was matured in a variety of casks, including bourbon, sherry, and virgin new charred oak, the latter being one of the first times Glenmorangie used this wood profile. This is special stuff, and something of a time capsule to the early days of Dr. Bill.

A limited-edition nine-year-old single malt form Glenallachie that was distilled in 2012 and initially matured in ex-bourbon barrels, before a secondary maturation in European oak wine barriques from Languedoc and Valpolicella, as well as two Premier Cru Classé chateaux in Bordeaux. Aromas of orange blossom, Maraschino cherries, espresso, honeysuckle, hazelnuts, lavender, cinnamon and peaches fill the nose, complemented by notes of dark chocolate, redcurrants, sugared almonds, burnt coffee beans, orange zest, ginger, liquorice and blackberries throughout the palate and lingering in the finish.

Highland Park Warrior Series Collection one of 300 Complete Set

This Highland Park bottling celebrates King Christian I of Denmark and his important role in the Orkney Islands becoming part of Scotland in 1468. He was a clever and cosmopolitan sovereign who managed to unite Denmark, Norway and Sweden, a region that at the time, included the Orkney Islands where our world renowned distillery has been based since 1798.
One of the rarest bottles of the Highland Park range in modern times, only 300 bottles of the King Christian Volume 1 have been released for the travel retail market. It was released in Feb of 2016 as part of the Warrior series.
Matured in a combination of Refill Butts and Hogsheads of exceptional age and character, this whisky, like its namesake king, is the embodiment of unity.
This expression has been matured in both refill butts and hogsheads of “exceptional age”.
Thorfinn was a man of much power and influence, who at one stage controlled the whole of the Orkney Islands. The Orkneyinga Saga described him as a great chief, the tallest and strongest of men whose remains are buried in St Magnus Cathedral on Orkney.
Colour: A fairly full deep reddy copper with lighter gold tones running through.
Nose: A fuller dunnage / old oak cask nose going on here, with just a touch of lactic acid which tales off thankfully after a few moments leaving eucalyptus and cedar wood notes along with sweet autumn berries and gentle sherry christmasness and spice.
Palate: Pretty thick mouthfeel here, at first you think it’s smooth, but then spices kick in reminding you of Thorfinn’s power! It’s sweet, with wispy heathery sweetness amongst the gentle peat smoke. There’s American Oak sherry casks giving a menthol hit that turns up stronger in the finish.
Finish: A fresh slightly minty menthol kick, yet fruity and sweet. It’s fairly old and complex and stays around your palate for ages. Yummy.
Thoughts: A slightly off-putting nose for me at first but that clears given time to breath (you should give old whisky the time it deserves). Would I pay €1000 for a bottle? Nope… This needs to have its age stated at the very least in my mind when you’re paying that much. A pleasure to try nonetheless.
Ragnvald was most at home aboard his longship undertaking his many great expeditions throughout the Middle East & Asia.
Colour: Full golden with rusty tints.
Nose: Could be described as “old school”, it’s full of old dunnage cask wood nose. Leather, casks, old stuff! Highland heather that’s wilting because it’s over hot smoke from a peat fire near the end of its burn. Coming out are old restrained sherry notes, and lashings of vanilla fudge from great first fill bourbon casks. Really a nose you keep sniffing at and enjoying.
Palate: Thicker and old tasting on the palate, spicy and lively however. Green and red apples dipped in toffee custard.
Finish: Complex and lasting, sweet and fruity with vanilla cream running through and a blast of smoke at the end. Balanced so that no sour cask notes are to be found, ideal.
Thoughts: Corker of a whisky, just the old style I love, but that my wallet doesn’t. For that sort of price you’d hope for an age statement. Saying that, damn, it’s a fine old dram to sit with for a lovely long evening while it’s cold and wet out.
The last three & most recent offerings in the ‘Warrior’ series use an increased quantity of European oak sherry seasoned casks. This allows Sigurd, Ragnvald & Thorfinn to deliver more complex, richer and sweeter flavours.
Sigurd is considered amongst the strongest & most courageous warriors and ultimately one of the most feared Viking Earls.
Colour: Full gold with slightly rusty copper hues.
Nose: Give it some time and gentle soft autumn fruits will greet you, a little like a harvest festival pudding with a sheath of corn next to it for decoration.
Palate: A fuller, more oily mouthfeel greets you introducing smooth and creamy fruits as if they’ve been stewed and covered in vanilla custard, with nutmeg over the top to spice it up a touch. Inviting with a hint of smoke.
Finish: Smooth and oily, but something in there keeping you refreshed. Sweet and decadent, yet balanced and not deeply into the winter fruits.
Thoughts: A much more soothing and fine dram here, starting to be reflected in the price. It’s got more going on, but feels more relaxed and competent.Harald
Produced using both American & European oak casks. 50-50 first fill and refill, almost 50-50 Euro and American oak sherries.
Celebrated through this release, King Harald was famed for his army, which was revered across the world at that time.
Colour: Full gold
Nose: Give it some time to open up and you’re rewarded with sherry fruits, raisins and sultanas all sitting in their own smoky pit. A little costal nature has crept in from somewhere. Spices and ginger are all there supporting it nicely.
Palate: Ever so slightly thin on the palate considering what the nose promises, but it’s smooth and sweet with gently spiced baked apples, it’s very pleasant indeed.
Finish: Slightly tingly on the way down and warming on the chest, nice and interesting finish here of a reasonable length.
Thoughts: A more full time autumnal dram that’s still light enough as an early evening drop of drammage.
EINAR
Highland Park Einar: 1L, 40% ABV
Einar was crafted as a tribute to one of the most feared and ruthless Vikings of his time. Einar was a hard and successful Viking, often venturing on treacherous long voyages.
Produced using both American & European oak casks.
Nose: For me a little more closed at first, but soon opens out revealing sweet, darker autumn fruits amongst smoky whiffs.
Palate: Smooth going spiced fairly quickly then settling back down to dark brown sugar and winter Christmas cake fruits. Quite autumnal. Just a tickle of smoke from the peat, but fairly restrained. Light enough mouthfeel (can only assume it’s chill-filtered), something also slightly spirity there too.
Finish: Sweet, warming, fruity and medium in length.
Thoughts: Not a surprise in that this is defo a step up from Svein, it’s gone from a summery dram into something much more suited for a slightly chilly autumn day, good stuff, and still fairly reasonably priced.
SVEIN
Highland Park Svein: 1L, 40% ABV
There’s lots of American Oak Sherry casks, a decent percentage are first fill (30%).
Colour: Light gold
Nose: Barley malt coming through easily, I guess this is a little younger. Sweet and gentle hints of smoke. Green toffee apples and a touch of citrus (orange peel).
Palate: Instant sweet hit of smooth barley and vanilla sugars with slight spices kicking in after a moment along with a slight smokiness. Oak hinting strongly right in the background, enough to peak your interest. Fairly light mouthfeel, balanced, summery and easy going.
Finish: Spiced warmth hits your chest and dies away reasonably fast with dying embers lasting much longer.
Thoughts: A rather nice, inexpensive session dram.
This cask strength special edition is part of The warrior Series bottled exclusively for the Taiwanese duty free market – 70cl at 60.5% strength.
Ardbeg 25 Year Old 2022 Release 70cl, 46%
The 2022 release of Ardbeg 25 Year Old is a smoky single malt with layers of sweetness that was matured in ex-bourbon barrels and bottled in 2021. Aromas of cream, smoke, peppermint, toffee, fennel, pine resin, earthy bonfires and ripe bananas fill the nose, complemented by notes of white pepper, sherbet lemons, candied apples, oranges, pears, tar, carbolic soap, creamy toffee, aniseed, rich smoke and antiseptic throughout the palate.
Bottled from incredibly rare casks filled during some of the Distillery’s darkest days, this is Ardbeg at its most intricate, balanced and beguiling.
Majestic aromas of smoked cream and earthy bonfires are masterfully interwoven with layers of pine and fragrant candle wax. Hot pepper rises on the palate, twisting around lemon sherbet sweetness, while hints of carbolic soap and tar flow into a long aftertaste characterised by delicate aniseed entwined with lingering cream and fudge.

Deanston 15 Year Old Tequila Cask Finish 2007 (70cl, 52.5%)
This limited edition from Deanston distillery was finished in ex-tequila casks from Altos, Jalisco. Bottled at cask strength as a 15-year-old expression, the nose has rich, nutty and fruity aromas, joined on the palate by relatively dry notes of caramelised agave, baked apples and warm spices.

Journey is the entry level expression from the Isle of Jura range (which was relaunched in mid-2018). It was aged exclusively in American white oak ex-bourbon barrels and bottled at 40% ABV. A tasty introduction to Jura’s single malts.
Benriach Smoky Quarter Cask 1L, 46%
Benriach’s Smoky Quarter Cask celebrates the distillery’s use of peat, which began in the 1970s, harking back to whisky production of old, while breaking the conventional style of whisky from the Speyside region. The use of wood-rich Highland peat results in a sweet, smoky profile, and this expression is crafted with a balance of Benriach’s peated and unpeated spirit. Initially matured in bourbon barrels, the whisky is then transferred to bespoke quarter casks. The smaller cask size ensures greater interaction between the whisky and the oak, resulting in rewardingly rich layers of fruit, vanilla, and mellow wood smoke. Oh, and this is a litre bottle originally released for travel retail, so, even more, to go round!

A litre bottle of Benriach Quarter Cask, which is first aged in bourbon barrels before a second maturation in bespoke quarter casks. The smaller casks allow for more interaction between the wood and whisky, amplifying those buttery, woody flavours we know and love.

The pinnacle of the Bunnahabhain range, aged for 40 long years: a piece of distillery history. The limited edition Glenfiddich 29-year-old, Grand Yozakura celebrates the unforgettable experience of ‘cherry blossom viewing at night’ — a fleeting moment when beautiful blossoms can be admired under the moonlight. As the first Scottish single malt whisky to do so, this expression has been finished in casks that used to hold Japanese Awamori — an aged spirit native to the island of Okinawa made from rice.
The nose offers zingy herbal aromas along with zesty and ripe fruits, caramelised almonds and cinnamon. The palate is layered with notes of toasted oak, creamy vanilla toffee-coated green apples and silky tannins with an earthy lingering finish.

Following their 1981 Vintage Single Cask, Tomintoul have dug out an even older single malt whisky, this one coming from April 1977! After a lengthy maturation in a sherry cask, the whisky was bottled in June 2015, without chill-filtration or colouring, with an outrun of 470 beautiful bottles, which come in rather handsome presentation boxes.

A wonderfully fruit-forward single malt whisky from Tel Aviv’s Milk & Honey Distillery and its Apex series. This expression was initially aged in ex-bourbon casks, but before being bottled, it was treated to a six month stay in pomegranate wine casks. As you might expect, some of the familiar tangy, sweet, juicy notes of pomegranates have made their way into the whisky, making for a fascinating expression.
