Single malt Scotch whisky is one of the most revered spirits in the world. It has such scope for variation, it can offer complexity or simplicity, unbridled power or a subtle whisper. To legally be called a single malt Scotch, the whisky must be distilled at a single distillery in Scotland, in a copper pot still from nothing other than malted barley, yeast and water. It must then be aged in an oak cask for at least three years and a day, and be bottled at no less than 40% abv.

A collectible bottling from the much-adored Springbank Distillery in Campbeltown, which has been drawn from casks that previously held rum. This single malt Scotch whisky was distilled back in 1989, and allowed to age for 12 years, eventually being bottled in 2002 with an outturn of 5,700 bottles.

A 1989 Springbank bottled at 12 years old. This was distilled in the year production fully restarted after a 10 year hiatus and was finished in rum casks.

It’s Bruichladdich’s Octomore 11.3 expression right here, folks! This particular edition was made with barley grown on Islay by James Brown at the Octomore Farm, which is exposed to the coastal breeze of the Atlantic Ocean. After distillation, it was allowed to matured for five years in first-fill American whiskey casks, including ones from Jim Beam, Heaven Hill, Buffalo Track and Jack Daniel’s. As ever for the Octomore series, this is a heavily peated stuff, weighing in at a hefty 194 PPM.

Master whisky maker Gordon Motion opted for a higher proportion of Orkney peated malt than previous releases, resulting in a richly smoky profile. The single malt was matured in a combination of first-fill and refill sherry seasoned American and European oak casks, rounding off the hearty peat smoke with zesty layers of fruit and warming spice.
