Universally considered the king of the wines of Piedmont, Barolo is made from Nebbiolo grapes grown in a limited part of the Langhe, near the town of Barolo. It is aged for at least 3 years, 2 of which are spent in oak or chestnut barrels. Bottles must be stored horizontally in a dry, cool wine cellar.
Cannubi is the long, gradually rising hill in the centre of the Barolo area. Here, Serravallian and Tortonian soils meet and merge, creating bluish-gray marls rich in magnesium and manganese carbonates that take on a whitish-gray hue at the surface due to weathering: clays mixed with very fine sands, impregnated with a strong limestone content composed of magnesium and manganese carbonates. Their technical name is “Sant’Agata fossil marls”, but they are commonly called Toû and on average they comprise clays (55%), sands (30%) and limestone (15%). Surrounded by higher hills that protect it from bad weather and excessive flow of air, Cannubi enjoys a very special, unique microclimate.
MALVASIA OF SCHIERANO, SPUMANTE

This elegant, traditional style Brunello is produced at a mid-sized estate located in the southern hills of Montalcino, between the towns of Sant’ Angelo in Colle and Castelnuovo dell’Abate, one of the most quintessentially picturesque areas in Tuscany.
The Casisano vineyard enjoys southeastern exposure and is composed of various soil types. It is particularly rich in galestro stone.
The wine sees 25 days of skin maceration and is then aged in Slavonian oak casks for 3 years, followed by an additional six months of bottle aging.
The beginning of 2016 saw an increase in precipitation, but a complete absence of snow. Spring was characterized by average temperatures and rains, which started to become more and more scarce in the middle of June, the last ten days of which were very sunny with good ventilation. This seasonal trend brought the plants to an excellent vegetative balance.
The summer passed with little rain and excellent diurnal temperature variations, especially between August and September. These conditions, combined with good ventilation, allowed for a harvest of healthy grapes with important organoleptic characteristics. The harvest ended in mid-October, benefitting from long dry and well-ventilated periods. The harvested grapes thus manifested a remarkable complexity of aromas, elegant tannins and excellent natural acidity. All features that immediately indicated a vintage of the highest quality.
Brunello di Montalcino Riserva Vigna Paganelli is produced only in the best vintages and in limited quantity.
This wine comes exclusively from “I Paganelli” vineyard, the oldest one in the estate, planted in 1964. Its vines, used as a clonal reference when planting new vineyards, produce high quality grapes which are picked by the individual selection of the best and ripest bunches.
After the manual harvest, the must ferments at controlled temperature. Subsequently the wine spends a long time in large French oak casks and it is then aged in the bottle.
Ca Rugate are considered one of the very top producers in Veneto and this wine was awarded 91 Points – Wine Spectator and 88 Points – Robert Parker.

2018 was a complex harvest which started in August with the whites and culminated in October with the red grapes of Punta Toletti and Campo Lavei. Great attention was paid to the weather conditions, with quieter moments balanced out by acceleration of pace, reacting to nature and ensuring grapes were harvested at their optimum quality.

Following the traditional Amarone production method, the grapes are dried in Riondo’s temperature-controlled warehouse until the January following the harvest. The wine is aged in oak for 24 months. Valpolicella Ripasso Castelforte is a Venetian red wine made from Corvina, Corvinone and Rondinella grapes that undergoes a second fermentation with the addition of exhausted Amarone marc: it releases a rich and full-bodied sensory profile, full of fruity hints of black cherry and cherries, oriental spices , hints of vanilla and light balsamic tips, while the sip is enveloping and of great persistence.
Produced from Corvina, Rondinella and Corvinone grapes, with small amounts of other local grape varieties. Vinification takes place in Ganimede fermenters, which uses the carbon dioxide gas that is generated during fermentation, where the grape skins and wine are continuously mixed in order to extract colour and tannins. The wine is aged partly in stainless-steel tanks, and partly in large oak casks for twelve months. An elegant Valpolicella with excellent body that shows intense notes of blueberry, cherry, liquorice, balsamic and eucalyptus notes. It is medium-bodies with soft, velvety tannins and a pleasant, medium-long finish.

The predecessor of Amarone, Recioto is the appellation’s signature dessert wine produced using a similar method. Flavors of raisined fruit, particularly cherries, are highly concentrated. Vanilla notes add structure to this powerful, rich red. The tannins are ripe and sweet rounding out the finish. Dried clusters are vinified in stainless steel and aged 18 months in French oak barrels. Unlike its predecessor, Recioto’s fermentation is halted, thus allowing it to retain a higher concentration of residual sugar.
A Barolo of high standing, both austere and complex. Deep red garnet in color. Delicately spiced bouquet (notes of eucalyptus, licorice and menthol), mature fruit (liqueur soaked cherries, blackberries and prunes) and hints of violets and medicinal herbs. Powerful on the palate, lightly acidic and fresh. Lasting finish.
Ageing: one year in barriques from Allier and one year in oak casks still from Allier (2000 lt). After a soft clarification, the wine is bottled for a further period of maturation in
the bottle, the lenght depends from the characteristics of the vintages, but never less than 12 months.

This wine is showing exceptionally well in this classic vintage. The 2016 Guidalberto (Cabernet Sauvignon and a smaller percentage of Merlot) opens to a full and generous bouquet and a beautifully rich and velvety appearance. This edition of Tenuta San Guido’s mid-level wine offers a bigger aromatic profile, more texture and more volume as well. Dark cherry and blackberry segue to spice, tar, leather and sweet fruit at the end. The mouthfeel is elegantly shaped, silky and nuanced. This may well be the best vintage of Guidalberto I have yet to taste—and you can get this wine at a great price too.

The grapes used in the production of this wine come from vineyards located on hills with good slope, characterized by predominantly calcareous clay soil, interspersed with compact layers of sandstone and covered with fine quartz sand and fine silt. The grapes can bring an abundance of trace elements and ensuring a broad and immediate expression of the bouquet.
The vines are grown with Guyot on hills with good slope.
The grapes, freshly picked, arrives in the cellar integrates and is rapidly pressed and gently destalked to extract from the peel and the outer area of the grape only the most noble and aromatic fractions. Fermentation, at a controlled temperature, takes place in thermo-conditioned tanks. Maceration of the skins lasts 8 days, during which the fermenting juice is regularly recycled from the bottom to the top of the tank in order to integrate the tannins softly and extract the color slowly. This procedure is finished throughout all the sugar is converted into alcohol.
The wine is then racked into cement tanks, that are lined with fiberglass and insulated by cork where it remains for a long time the post-fermentation temperature 22° degrees C. (72° F.). In these cement tanks, Malolactic fermentation begins spontaneously and is completed within 2 months. The wine is aged for 2 years, a part in Slavonian oak barrels and the other part in French oak barrels (30 and 120 hectoliters / 789 and 3.156 U.S. gallons). The fining carries on in bottle, for 12 months, before going into the market. The Barolo Tradizione reaches its maturity after 4 years from the harvest and matures further between 4 and 20 years.
The color is garnet red with ruby hues. The aroma is intense and persistent with clean scents of spices, cinnamon, absinthe, tobacco and rose bush. The taste is full and elegant and with soft tannins. The spicy and the boisè blend perfectly.

A sparkling rose wine made exclusively from carefully picked Malvasia di Schierano grapes.
The perlage is fine and persistent. The colour is pale pink, almost cherry. The aromatic pallet is intense and musky reminiscent of clear scents of wild berries, blueberries and wild strawberries.
The flavour is sweet, slightly sparkling and it ignites the olfactory sensations.
The growing areas for Asti (Piedmont) are difficult areas in which to grow vines. High on the hillsides the vineyards are small, steep and labour intensive. But their unique climate is perfect for the aromatic freshness we need. Machines can not easily operate here and harvesting is nearly always by hand.
In 1895, Federico Martinotti, invented a new method to create Spumante. By creating the secondary fermentation in a closed and sealed vat he found a way not only to make wines of consistently high quality, but also a way to do it more quickly in order to preserve the natural freshness of the grapes. The process is now: grapes to fermentation, secondary fermentation to bottle.
Maso Montalto” is a red wine from the Trento area with an elegant and full-bodied sip, aged for 12 months in oak barrels and at least 15 months in bottle. With an intense, evolved profile and a good expansive richness, with a warm, complex and enveloping structure, it offers the nose clear aromas of berries, black cherry, cherry, sweet spices, alpine herbs and toasted wood nuances.

Sangiovese wine grapes with some Merlot and Colorina added to the mix. The 2017 Chianti came from a hot vintage with drought conditions. Higher elevation vineyards did enjoy some cooling breezes overnight giving some relief to the grapes and balance to the wine. The vineyards of origin are situated on calcareous soils rich in marl, stones and stones (which give the wine its name) and partly clayey, located at an altitude between 100 and 300 metres above sea level. For this red-masterpiece, the alcoholic fermentation took place in stainless steel at a controlled temperature between 28° and 30° C without the addition of external yeasts. After malolactic fermentation, the wine was transferred to French oak barriques (for 1/3 new wood and for the remainder of the first and second passage) where it was aged for 24 months, keeping the masses separated by vineyard origin. The assembly was in fact carried out only close to bottling. Before release, Sassicaia 2021 rested for a certain period of time in the bottle.

Ca’ Florian is the heart of Tommasi, our oldest vineyards, and the intimate and coveted place that we have called home since 1902. There could be no better place to honor our humble beginnings and no better way to do it than by dedicating this single-vineyard to our top Amarone Riserva. Just next door to the house where our grandfather Giacomo settled, are the family’s first vineyards. Here, we have preserved every living memory of tradition, from the “marogne” dry-stone wall terraced vineyards with the pergola veronese trellising, to the withering of the grapes on the “arele”, the handmade bamboo racks. Alcoholic fermentation lasts around 3/4 weeks. Each parcel is processed and aged separately until when they select which ones will be included for the blend of Perbacco or the ones that will keep ageing to become Barolo Castiglione.
Aging: Total ageing is approximately 2 years. After malolactic done both in barrique and big Slavonian casks, the wine keeps ageing in oak for 2 years. Blending in steel tanks to follow prior bottling.
