This concept was born out of the winery’s love for Xinisteri, aiming to further highlight the variety and explore its boundaries. Three different vineyards from three distinct villages within the Protected Designation of Origin zone “Laona Akamas” were selected. Each vineyard plot possesses its unique characteristics that make it truly exceptional. The fermentation was held spontaneously, without the addition of yeasts, in an effort to create a wine with minimal interventions, following the variety’s characteristics for each region and reflecting the terroir from which it originates.
Kathikas. Planting year 1967, shaped in a traditional goblet, calcific soil with 15% clay, altitude 700 meters, west orientation. Citrus aromas with a full body.
Arodes. Planting.year 1920, shaped in a traditional goblet, clay-limestone soil, altitude 700 meters, east orientation. Aromas of white-fleshed fruits with a rich body and volume.

This 2023-release from Kilchoman was exclusively matured in Pedro Ximenez sherry casks, bringing a rich, sweet character to its peated malt. There are aromas of raisin and peat smoke stacked on top of each other with notes of candied citrus, dark chocolate, Manuka honey and salty peat smoke on the palate.
Here is the 2023 release from Kilchoman of its Sherry Cask Matured whisky, this time exclusively matured in Pedro Ximénez (PX) sherry casks. It was bottled at 50% ABV and you can expect lots of dark and sweet fruit, creamy nutty notes, and aromatic spice to interplay with the coastal Islay smoke.

A 25-year-old Arran single malt, released in Arran’s 25th year of production, this whisky has been matured in a combination of ex-bourbon and ex-sherry casks for a quarter of a century. Aromas of rich oak spice, nutmeg, baked figs, sultanas and black cherries fill the nose. The palate offers notes of fruit cake, toasted almonds, cinnamon, orange zest, honey and apricots that linger in the finish.
25 year old single malt from the Arran Distillery, located on the island which shares its name. Launched in 2020, the 25th year of Arran’s production, this expression was aged in a combination of 35% ex-sherry and 65% ex-bourbon casks, and it was all allowed 12 months of maturation in first-fill and refill sherry hogsheads before bottling. Solist is German for ‘Soloist’, which in this case refers to the fact that this expression is from Kavalan’s single cask range (they really, really like musical metaphors). Given this whisky is of course Taiwanese, I can’t really tell you why this range has an apparently German name but I can tell you that their ex-Bourbon cask releases won a Gold Medal at both the ISC 2010 and the IWSC 2011. Impressive.

This expression from Mossburn’s Caisteal Chamuis range is a marvellous blended malt Scotch whisky made with Island malts that have been matured for 12 years in refill American oak hogsheads, and then given a finishing period in Oloroso sherry casks. The peaty notes of the Island whiskies blends deliciously with the sweet dried fruit notes from the sherry casks, making for a satisfying expression. The name Caisteal Chamuis comes from a castle that you’ll find up on the Isle of Skye, which is a neat connection.

It was named after a castle on the Isle of Skye, this expression was initially aged in a combination of first-fill and refill American oak hogshead, before being married together for a finishing period in bourbon barrels. A decidedly smoky dram, comprised of peated whiskies from the Scottish Isles, with wafts of sweet vanilla imparted by the aforementioned bourbon barrels.

In making Laphroaig, malted barley is dried over a peat fire. The smoke from this peat, found only on Islay, gives Laphroaig its particularly rich flavour.
