Valpolicella Ripasso Doc Classico Superiore 75cl, 14% is an organic red wine from the Valpolicella Classica zone, produced from hillside vineyards in Novaia, Marano di Valpolicella, at 250 to 400 metres above sea level with mainly south and south-east exposure. The wine is made from Corvina, Corvinone and Rondinella, with manual harvesting in the last week of September.
What makes this bottle especially attractive is its traditional Ripasso production. After the first fermentation, the wine is refermented on the grape skins of Recioto and Amarone, adding extra depth, alcohol, structure and aromatic complexity.
