Port Dundas 16 Year Old 2008 (cask 585867 & 585868) (Signatory)
This single grain Scotch whisky was distilled at Port Dundas in August 2008 and spent the next 16 years maturing in a pair of second-fill oloroso sherry butts. The casks were cracked open by Signatory in December 2024, independently bottling up the whisky without added colour or chill filtration.

Description
Tasting Note
Nose Sherried fruits, butterscotch, and fruit-laden flapjack, with cakey spices joining in time.
Palate Silky notes of honeyed fruit, milk chocolate, and fruity maple granola, with rich oaken spices in tow.
Finish Warming spices linger, with candied nuts, and dried orange wheels dipped in dark chocolate.
