For Triskelion, three legendary Highland Park whisky makers joined forces. Together, Gordon Motion, Max McFarlane and John Ramsay chose and married three principal cask types, with the aim of exploring the influence of wood and cask seasoning. Liquid from first-fill sherry seasoned Spanish oak butts, first-fill sherry seasoned American oak casks and first-fill bourbon barrels and hogsheads, along with a small number of refill casks was bottled up at 45.1% ABV. Stone fruit, citrus and peat smoke, you’ll find it all here!

This right here is a 10-year-old single malt from an undisclosed distillery on Islay, with 25% of it having been finished in first-fill oloroso sherry casks, and bestowed the decidedly descriptive name Seaweed & Aeons & Digging & Fire. If those four words (and three ampersands) aren’t quite enough of an explanation of what this expression is all about, here are a few more: stripped-back, smoky, complex, a bit sherried, balanced, coastal. Yeah, that should do it. Great for people who love uncompromising Islay whisky and sans-serif fonts.

Depth Charge Spiced Rum packs a big, powerful flavour profile, having been made with a fantastic base of Caribbean rum, a selection of tasty spices and generous helpings of lime and mandarin at its core. The name comes from an ancient seafaring tale, where there was once a formidable sailor who encountered a fierce mythological sea monster, which defeated it comprehensively. But then, something appeared to challenge the sea monster – it was Depth Charge! Or at least, some version of that story. You can see what they did there. Anyway, expect this expression to be great served simply over ice with a good wedge of lime, and it should pair brilliantly with all those classic rum mixers we know and love.

It’s not a flavour combination that jumps to mind right away, but strawberries and balsamic vinegar is an absolutely astounding pairing that we don’t think gets nearly enough love. That Boutique-y Gin Company clearly agree and have proffered their own way to put the flavour combo in front of everybody’s eyes – by making Strawberry & Balsamico Gin! They have used a classically-styled base gin and given it the addition of fresh strawberries, strawberry and black pepper distillates and Aceto di Balsamico tradizionale di Modena DOP, which is aged between 12 and 25 years in casks made from chestnut, cherry, oak, mulberry, ash and juniper.

Neroli Oil is extracted from the blossom of the bitter orange tree through steam-distillation, and is as awesome as it is pricey, requiring over a tonne of flowers to produce just 1kg of oil – so of course we wanted to make a gin out of it!

Moonshot Gin (That Boutique-y Gin Company) (70cl, 46%)

Every gram of the botanicals used to make this gin was sent into near-space (over 24km) and exposed to an air pressure of less than 1/100th of that at sea level! That’s seriously low. In fact, if you were to find yourself above just 18km, also known as Armstong’s limit (where the pressure has already dropped to around 6.3 kPa or 1/16th of that at sea level), then the fluids in your body would vaporise!
Juniper, Coriander, Camomile Flowers, Fresh Lemon Peel, Cardamom, Dried Bitter Orange Peel, Cinnamon, Cubeb Pepper, Liquorice Root and Angelica were used. Oh, and Moon Rock. Obviously. Once they returned to earth, we vacuum distilled them at room temperature (at a pressure nearer 1/10th of that at sea level, in case you were wondering) for freshness and elegance.

The cucamelon is a wonderful fruit native to Mexico and Central America that looks like a tiny watermelon but tastes similar to a lime-dipped cucumber. Frankly they seem ridiculous, but cucamelons really do exist – and we made a gin with them!
