Single Malt from the Highlands takes on many shapes and forms. Because the region is so vast it is difficult to make sweeping statements. The most popular Highland single malt (not including the Speyside region, which is situated in the Highlands) – is Glenmorangie. Typically, single malt from the region is put into four subregions, named for the cardinal compass points. To the north there are big bodied single malts, with cereal sweetness and richness, take The Dalmore, for example. Toward the south there are lighter, fruitier whiskies with a definite dryness. Aberfeldy is a shining example of this. To the east there are some full-bodied, dry whiskies with lots of fruit and pungency. The superb Glen Garioch is one such single malt distillery. The Western Highlands offer full body and real power with peaty, smoky overtones, nearer the coast there are some more maritime flavoured whiskies too including malts from Clynelish and Pulteney.

After an extended maturation period, the two are then reunited back into first-fill bourbon casks to harmonise.

Glenmorangie A Tale of Ice Cream (70cl, 46%)

To create a single malt evocative of a trip to the ice cream parlour, legendary whisky maker Dr Bill Lumsden aged this one-off Glenmorangie in a combination of bourbon barrels and toasted new oak. He carefully selected these new casks with high concentrations of vanillin, an organic compound present in oak which imparts flavours of creamy vanilla. As a result, this inviting Highland whisky is densely layered with notes of coconut, brioche, almonds and popcorn with hints of lemon, sweet anise and – of course – ice cream.
The Glenmorangie ‘A Tale of…’ series expands with another expression that reflects director of whisky creation Dr Bill Lumsden’s sweet tooth. The good doctor was inspired by his favourite ice cream parlour to create this whisky, which is rich, creamy, and full of vanilla flavours.
To achieve this, Lumsden selected casks rich in vanillin, the aromatic compound which brings vanilla flavours to whisky. The good people at Glenmo explain: “When you toast barrels, the lignin (which aids the wood’s structure) breaks down and releases compounds including vanillin. Glenmorangie’s high-vanillin casks were toasted in a particular way, to create higher concentrations of vanillin”.
Glenmorangie A Tale of Ice Cream represents the first time the distillery has used casks toasted to achieve this effect. This followed experimentation with a variety of different woods before selecting virgin oak casks toasted in this particular way. The press release also makes a point of noting that the whisky does not contain vanilla extract. Which would be ILLEGAL in Scotch whisky.

Golden in colour and honeyed on the palate, The Nectar is made by finishing Glenmorangie single malt in casks used to age some of the world’s great sweet wines. These include Sauternes and Monbazillac from France, Moscatel from Spain and Tokaji from Hungary. A fitting successor to the discontinued Nectar D’or and an excellent after-dinner dram.
It was the memory of entering a French pastry shop that prompted Glenmorangie head of whisky creation Dr Bill Lumsden to create the brilliant Glenmorangie The Nectar D’Or. Sadly, in 2023 Glenmorangie made the announcement that Nectar D’or was being discontinued, but we weren’t upset for too long because the Highland Scotch whisky brand has created a more than fitting successor: Glenmorangie The Nectar 16 Year Old
It’s a single malt that was aged for 14 years in bourbon casks that was then finished for two more years in a new combination of great sweet white wine casks. This includes French Sauternes and Monbazillac to bring notes of orchard fruit and buttery pastries, Spanish Moscatel for sweet, syrupy dessert flavours, and Hungarian Tokaji barrels for nuttier, honeyed elements.

Cask 2230 was filled all the way back in December 1968 and cracked open in November 2016, with 404 bottles produced. Dalmore 12 Years Old Sherry Cask Select combines Dalmore’s house style with a delicious sherry influence. The single malt first aged for 10 years in American white oak ex-bourbon barrels. It was then finished in Oloroso and Pedro Ximénez sherry casks from three historic cooperages in Jerez de la Frontera, creating a sweet and elegant character. The whisky has aromas of caramelised orange, ginger and sultanas, laced with honey. The palate brings dark chocolate and crushed almonds with a dusting of cinnamon. Flavours of sweet mangos, panna cotta and lemon sponge cake linger on the finish. This 2023 release has an updated purple design that catches the eye.

Inspired by visits to Japan, Glenmorangie’s director of distilling and whisky creation, Dr. Bill Lumsden, decided to create this pretty single malt you see before. Glenmorangie’s A Tale Of Tokyo is the fourth release in the ‘Tale of’ series and the first one to be partially aged in Japanese Mizunara oak casks. It’s actually a marriage of whisky aged in both sherry and bourbon barrels as well as Glenmorangie whisky aged in the rare Japanese wood. It was all bottled together at 46% ABV and sports a label and packaging made in collaboration with celebrated Japanese artist, Yamaguchi Akira. It’s their perspective of the city’s contrasts and layers of history and culture that inspired the design.

Definitive single malt whisky maker, The Dalmore, is releasing a refined new single malt, The Dalmore 45, to add to its exceptional collection.
The Dalmore 45 has been hand crafted by Master Distiller Richard Paterson who has used some of the distillery’s rarest aged liquids to create what Richard himself has described as ‘flawless perfection’.
Initially matured in American white oak ex-bourbon casks, the liquid has then been transferred into two different Vintage Graham’s Port Colheita pipes dating from 1961 and 1963 to create layers of flavour, which are indulgent, smooth and complex.
For its final flourish the whisky was then married together in first fill American white oak ex-bourbon casks providing The Dalmore 45 with a truly unrivalled finish. The Dalmore’s use of multiple casks is a fitting example of the distillery’s commitment to exquisite cask curation, which focuses on sourcing and utilising only the best casks from the world’s finest bodegas and wineries.
Purposefully retained at 40% ABV, The Dalmore 45 features exquisite flavours of red berries, soft liquorice, crushed hazelnuts, bitter chocolate and Manuka honey. This is followed by the sweet flavours of sticky toffee pudding, Bramley apples and juicy dates to finish.
Richard Paterson commented: “By personally selecting the very finest American white oak ex-bourbon casks and Port Colheita Pipes from 1961 and 1963, I have been able to create a truly unique expression which is indulgent and smooth with a vibrant and lively flavour profile. The gang at Darkness hopped up to the Highlands for this smoky single malt and sized it up to be the perfect fit for a finish in one of their little oloroso sherry octaves. Matured for a total of 19 years, the small size of the octave cask used for finishing enabled more interaction between the liquid and the wood, in other words, more sherry and oak influence upon the deliciously peaty single malt.
