Pickering’s Gin (70cl, 42%)
Pickering’s Gin is distilled in Edinburgh using a recipe found on a piece of paper which was written in 1947. After finely-tuning the ingredients, featuring botanicals like Juniper, Lemon, Lime, Coriander, Anise, Angelica, Cardamom, Clove and Fennel, the folks at the Summerhall Distillery started putting together their refreshing gin using a 500-litre copper still, charmingly named Gert.

Bloom Gin is a superb London Dry Gin produced by Greenall’s and named “Bloom” in reference to the floral nature of its botanicals: honeysuckle, pomelo and chamomile. In 2010 it was awarded a Platinum Medal at the World Spirits Competition.
Akori Yuzu Gin (70cl, 40%)
Akori gin, although its name and design suggest its Japanese origin, is actually a product of Spanish distillation art, specifically from the Campeny distilleries, which are already known for Tann’s and Only Gin. Typical Japanese botanicals such as dragon fruit, kumquats and ginger are used in the production of Akori. Kumquats are also known as dwarf oranges or dwarf bitter orange and belong to the rue family.
Akori Gin Yuzu impresses with its refreshing flavor profile, which is dominated by the yuzu fruit. A light ginger spice rounds off the aroma. This gin combines the clear notes of juniper with the unmistakable flavors of yuzu, tarragon and ginger to create a harmonious experience.

Xibal Equinox Guatemala Gin 70cl, 40cl
Xibal Equinox is a special edition of Xibal Gin, with a combination of the characteristic products that are grown during this season, such as grapefruit and guava, in addition to the characteristic ingredients of Xibal, among them we can mention: orange, lemon cardamom and pericón.
Aviation Gin (70cl, 42%)
A batch-distilled American gin that’s inspired by the fuller-bodied Dutch style and championed by Ryan Reynolds, whose body we can’t comment on for legal reasons.
Created by distillers Lee Medoff and Christian Krogstad, who teamed up with Seattle mixologist Ryan Magarian, this spicy, floral gin is made with rye neutral grain spirit and a ‘botanical democracy’ of juniper, cardamom, coriander, lavender, anise, sarsaparilla and orange peel.
This is, unsurprisingly, excellent in an Aviation cocktail, but also works well in a Martini and a G&T.
STEP 1: INFUSION
It all starts with our precise blend of botanicals – cardamom, coriander, French lavender, anise seed, sarsaparilla, juniper, and two kinds of orange peel. The botanicals are suspended in a pure, neutral grain spirit for 18 hours in macerating tanks.
STEP 2: DISTILLATION
The macerate is then pumped into a still along with pure water. Steam jackets heat the macerate, the vapors go into the condenser, which cools the vapors to form the gin distillate.
STEP 3: THE CUT
In a meticulously monitored process, the first fluid leaving the still, the “heads,” is removed. Collecting the “heart of the spirit” throughout the run, the distillers then determine the end of the cycle and make the final cut, “the tails.” This process takes approximately 7 hours and at this point, the “heart cut” is 142 proof.
STEP 4: BLENDING & BOTTLING
The “heart cut” is transferred to a blending tank where pure water is added, bringing the gin to the desired 84 proof. It is then sent to the bottling line for filling, capping, and labeling. Aviation is then hand-packed into boxes and ready to ship.
Brockmans Intensely Smooth Gin (1L, 40%)
From Brockmans distillery comes Brockmans Intensely Smooth Gin. It’s unique selection of botanicals including Tuscan juniper berries, Bulgarian coriander, blueberries, blackberries and bittersweet Valencian orange peel are steeped in grain spirit. It is then distilled in a 100 year old copper still, with the final gin boasting, as its name may suggest, an intensely smooth profile. The moody and opaque bottle is somewhat alluring..
Bishop’s Gin (70cl, 40.7%)
Bishop’s Gin takes its name from Englishman John Ponet, Bishop of Rochester and then Winchester in the 1550s. A reformer who questioned the divine right of kings and fought for religious freedoms, for example, he was controversial thinker in his time. His Belgian descendants would go on to found the Ponet distillery, in Hasselt 1763 and now in the 21st century Thierry Ponet is reviving the spirit of both. Bishop’s Gin is a London dry made with 8 botanicals including juniper nasturtium (also known as tropaeolum) and lemongrass.
Bobby’s Schiedam Dry Gin (70cl, 42%)
A Dutch gin which was launched in 2014, Bobby’s Schiedam Dry Gin features a recipe inspired by the creator’s grandfather, Bobby Alfons. It’s made with a combination of local and exotic ingredients, including juniper, clove, lemongrass, cubeb peppers and rosehips. Highlighting the meeting of Dutch and Indonesian flavours in the spirit, Bobby’s Schiedam Dry Gin comes in a bottle which harks back to the style of vessel used to hold jenever, with a pattern inspired by Indonesian designs.
