From one of Speyside’s most famously sherried distilleries (though Signatory’s lips are sealed) this 15-year-old single malt was matured in a combination of 1st and 2nd fill oloroso sherry butts. Un-chillfiltered, naturally coloured, and bottled with a healthy dose of mystery, it’s a proper sherry-lover’s dram at an excellent age.

Tasting Note
Nose: Rich dried fruits—raisins, figs, dates—interwoven with dark chocolate, caramelized pecans, subtle orange marmalade, oak spice, and a hint of leather .
Palate: Full-bodied and layered; stewed dark berries and cassis merge with toasted oak, espresso, treacle, and warm baking spices (nutmeg, clove, cinnamon) .
Finish: Long and plush—notes of spiced fruitcake, roasted chestnuts, dark toffee, bitter cocoa, and a faint pipe‑tobacco whisper remain on the palate .
