Gin is a distilled alcoholic drink that derives its predominant flavour from juniper berries (Juniperus communis). Gin is one of the broadest categories of spirits, all of various origins, styles, and flavour profiles, that revolve around juniper as a common ingredient.
Gin today is produced in subtly different ways, from a wide range of herbal ingredients, giving rise to a number of distinct styles and brands. After juniper, gin tends to be flavoured with botanical/herbal, spice, floral or fruit-flavours or often a combination. It is most commonly consumed mixed with tonic water. Gin is also often used as a base spirit to produce flavoured gin-based liqueurs such as, for example, Sloe gin, traditionally by the addition of fruit, flavourings and sugar.

The spirit is inspired by perfume production methods, and is made using ultrasonic maceration, vacuum distillation and CO2 supercritical extraction. Aged Gin is a 100% rye-based gin features the same 14 botanicals as the classic Elephant Gin recipe, though in increased quantities. After distillation, it was rested in a combination of new and aged wood over a period of a year. Hence the name. Co-founder Robin Gerlach’s inspiration for this maturation style came from the 18th-century practice of storing gin in oak barrels for shipping.
A complex, experimental and delicious gin would be enough to impress anyone, but they aren’t just content with making tasty tipples. The brand contributes 15% of all of its gins’ profits to elephant conservation, including foundations such as Space for Elephants, Big Life Foundation and the David Sheldrick Wildlife Trust.

Created by the legendary master distiller, Lesley Gracie, Orbium contains the same base distillates as Hendrick’s and is made in batches of just 500 litres.
The name Orbium derives from the word ‘orb’, the plural of Orbis and Latin for circle. Gracie felt this circular symbol represented the gin’s rounded character, and the ‘all seeing eye’ on the bottle design mirrors this theme.

A more recent addition to the Beefeater range. When creating Beefeater 24, Desmond Payne knew he had to come up with something totally different for his selection of botanicals. He used tea! The 12 ingredients used are Japanese Sencha Tea, Chinese green tea and then Seville orange peel, grapefruit peel, lemon peel, juniper, coriander seed, liquorice, angelica root, almond and orris root. It is called Beefeater 24 because the botanicals are steeped in the spirit for a full 24 hours. The result is a fragrant gin with good sweetness.

Daffy’s Small Batch Premium Gin is made with grain spirit from northern France, which is then distilled using a copper pot still. The Scottish distillers use a selection of eight botanicals for Daffy’s Gin, including juniper, Lebanese mint, coriander, angelica root, Spanish lemon and orange peels, cassia bark and orris root. It has been bottled at a very specific 43.4% ABV, as the distillers believe this to be the perfect strength for their expression – not excessively punchy, but with enough power behind it for balance and flavour.
The bottle design, incidentally, is the work of Robert McGinnis, the American artist who made film posters for various James Bond and Matt Helm films as well as Breakfast at Tiffany’s and Barbarella!

Bishop’s Gin takes its name from Englishman John Ponet, Bishop of Rochester and then Winchester in the 1550s. A reformer who questioned the divine right of kings and fought for religious freedoms, for example, he was controversial thinker in his time. His Belgian descendants would go on to found the Ponet distillery, in Hasselt 1763 and now in the 21st century Thierry Ponet is reviving the spirit of both. A batch-distilled American gin that’s inspired by the fuller-bodied Dutch style and championed by Ryan Reynolds, whose body we can’t comment on for legal reasons.
Created by distillers Lee Medoff and Christian Krogstad, who teamed up with Seattle mixologist Ryan Magarian, this spicy, floral gin is made with rye neutral grain spirit and a ‘botanical democracy’ of juniper, cardamom, coriander, lavender, anise, sarsaparilla and orange peel.
This is, unsurprisingly, excellent in an Aviation cocktail, but also works well in a Martini and a G&T.
STEP 1: INFUSION
It all starts with our precise blend of botanicals – cardamom, coriander, French lavender, anise seed, sarsaparilla, juniper, and two kinds of orange peel. The botanicals are suspended in a pure, neutral grain spirit for 18 hours in macerating tanks.
STEP 2: DISTILLATION
The macerate is then pumped into a still along with pure water. Steam jackets heat the macerate, the vapors go into the condenser, which cools the vapors to form the gin distillate.
STEP 3: THE CUT
In a meticulously monitored process, the first fluid leaving the still, the “heads,” is removed. Collecting the “heart of the spirit” throughout the run, the distillers then determine the end of the cycle and make the final cut, “the tails.” This process takes approximately 7 hours and at this point, the “heart cut” is 142 proof.
STEP 4: BLENDING & BOTTLING
The “heart cut” is transferred to a blending tank where pure water is added, bringing the gin to the desired 84 proof. It is then sent to the bottling line for filling, capping, and labeling. Aviation is then hand-packed into boxes and ready to ship.

Every gram of the botanicals used to make this gin was sent into near-space (over 24km) and exposed to an air pressure of less than 1/100th of that at sea level! That’s seriously low. In fact, if you were to find yourself above just 18km, also known as Armstong’s limit (where the pressure has already dropped to around 6.3 kPa or 1/16th of that at sea level), then the fluids in your body would vaporise!
Juniper, Coriander, Camomile Flowers, Fresh Lemon Peel, Cardamom, Dried Bitter Orange Peel, Cinnamon, Cubeb Pepper, Liquorice Root and Angelica were used. Oh, and Moon Rock. Obviously. Once they returned to earth, we vacuum distilled them at room temperature (at a pressure nearer 1/10th of that at sea level, in case you were wondering) for freshness and elegance.

A passion for discovery runs through all eight generations of the Whitley Neill family tree. So it’s perhaps fitting that while honeymooning in the beautiful Sicilian countryside, Frederick Neill and his new wife fell in love all over again, this time with the vibrant, zesty flavour of Sicilian blood oranges. Using his finely-honed distilling techniques, Freddy strove to create a vodka recipe that would evoke the memories of his Sicilian honeymoon. And it’s this recipe that led to the creation of Whitley Neill Blood Orange Gin.
