Gin today is produced in subtly different ways, from a wide range of herbal ingredients, giving rise to a number of distinct styles and brands. After juniper, gin tends to be flavoured with botanical/herbal, spice, floral or fruit-flavours or often a combination. It is most commonly consumed mixed with tonic water. Gin is also often used as a base spirit to produce flavoured gin-based liqueurs such as, for example, Sloe gin, traditionally by the addition of fruit, flavourings and sugar.

The spirit is inspired by perfume production methods, and is made using ultrasonic maceration, vacuum distillation and CO2 supercritical extraction. That all sounds very high tech and fancy, but in fact these techniques are also incredibly sustainable and efficient. Aged Gin is a 100% rye-based gin features the same 14 botanicals as the classic Elephant Gin recipe, though in increased quantities. After distillation, it was rested in a combination of new and aged wood over a period of a year. Hence the name. Co-founder Robin Gerlach’s inspiration for this maturation style came from the 18th-century practice of storing gin in oak barrels for shipping.

A complex, experimental and delicious gin would be enough to impress anyone, but they aren’t just content with making tasty tipples. Created at the Bruichladdich distillery, this superb Islay gin was distilled in the ‘ugly betty’ still described as “an oversized upside-down dustbin made of copper” by Tom Morton. Perhaps the best looking packaging we’ve ever seen for a gin – it’s not all style and no substance either. This is a world-class gin, at a proper ABV.

A huge 31 botanicals go into The Botanist, including some native to Islay. A more recent addition to the Beefeater range. When creating Beefeater 24, Desmond Payne knew he had to come up with something totally different for his selection of botanicals. He used tea! The 12 ingredients used are Japanese Sencha Tea, Chinese green tea and then Seville orange peel, grapefruit peel, lemon peel, juniper, coriander seed, liquorice, angelica root, almond and orris root. It is called Beefeater 24 because the botanicals are steeped in the spirit for a full 24 hours. The result is a fragrant gin with good sweetness.

Daffy’s Small Batch Premium Gin is made with grain spirit from northern France, which is then distilled using a copper pot still. The Scottish distillers use a selection of eight botanicals for Daffy’s Gin, including juniper, Lebanese mint, coriander, angelica root, Spanish lemon and orange peels, cassia bark and orris root. It has been bottled at a very specific 43.4% ABV, as the distillers believe this to be the perfect strength for their expression – not excessively punchy, but with enough power behind it for balance and flavour.

The bottle design, incidentally, is the work of Robert McGinnis, the American artist who made film posters for various James Bond and Matt Helm films as well as Breakfast at Tiffany’s and Barbarella!

A batch-distilled American gin that’s inspired by the fuller-bodied Dutch style and championed by Ryan Reynolds, whose body we can’t comment on for legal reasons.

Created by distillers Lee Medoff and Christian Krogstad, who teamed up with Seattle mixologist Ryan Magarian, this spicy, floral gin is made with rye neutral grain spirit and a ‘botanical democracy’ of juniper, cardamom, coriander, lavender, anise, sarsaparilla and orange peel.

This is, unsurprisingly, excellent in an Aviation cocktail, but also works well in a Martini and a G&T.

STEP 1: INFUSION

It all starts with our precise blend of botanicals – cardamom, coriander, French lavender, anise seed, sarsaparilla, juniper, and two kinds of orange peel. The botanicals are suspended in a pure, neutral grain spirit for 18 hours in macerating tanks.

STEP 2: DISTILLATION

The macerate is then pumped into a still along with pure water. Steam jackets heat the macerate, the vapors go into the condenser, which cools the vapors to form the gin distillate.

STEP 3: THE CUT

In a meticulously monitored process, the first fluid leaving the still, the “heads,” is removed. Collecting the “heart of the spirit” throughout the run, the distillers then determine the end of the cycle and make the final cut, “the tails.” This process takes approximately 7 hours and at this point, the “heart cut” is 142 proof.

STEP 4: BLENDING & BOTTLING

The “heart cut” is transferred to a blending tank where pure water is added, bringing the gin to the desired 84 proof. It is then sent to the bottling line for filling, capping, and labeling. Aviation is then hand-packed into boxes and ready to ship.

Every gram of the botanicals used to make this gin was sent into near-space (over 24km) and exposed to an air pressure of less than 1/100th of that at sea level! That’s seriously low. In fact, if you were to find yourself above just 18km, also known as Armstong’s limit (where the pressure has already dropped to around 6.3 kPa or 1/16th of that at sea level), then the fluids in your body would vaporise!

Juniper, Coriander, Camomile Flowers, Fresh Lemon Peel, Cardamom, Dried Bitter Orange Peel, Cinnamon, Cubeb Pepper, Liquorice Root and Angelica were used. Oh, and Moon Rock. Obviously.
