Dalmore 12 Years Old Sherry Cask Select combines Dalmore’s house style with a delicious sherry influence. The single malt first aged for 10 years in American white oak ex-bourbon barrels. It was then finished in Oloroso and Pedro Ximénez sherry casks from three historic cooperages in Jerez de la Frontera, creating a sweet and elegant character. The whisky has aromas of caramelised orange, ginger and sultanas, laced with honey. The palate brings dark chocolate and crushed almonds with a dusting of cinnamon. Flavours of sweet mangos, panna cotta and lemon sponge cake linger on the finish. This 2023 release has an updated purple design that catches the eye.

First released in 2013, the Dalmore 25 is matured initially in American white oak before a second maturation in a combination of Palomino Fino sherry butts and first fill bourbon casks. These are then married together in bourbon barrels before a finishing period in Tawny Port pipes.
In 2013 Dalmore extended their core range of stunning whiskies with the Dalmore 25 Year Old. As a distillery that has a history of using an intricate selection of maturing methods, the 25 Year Old continues that tradition. First, it matured in American white oak cask. After that, it was hand-divided into 25 year old Palomino Fino sherry butts and 1980s first-fill bourbon casks. Dalmore’s burnt orange 35-year-old is exquisitely packaged in a crystal decanter, courtesy of French crystal house Baccarat. A whisky this special deserves the five-star treatment; maturated in three different woods, it tastes divine.

The 2017 release of Dalmore 40 Year Old was aged in bourbon casks for around 30 years, then aged in oloroso-sherry butts for a further seven before being finished in first-fill bourbon barrels. The result is a whisky with notes of gingerbread, maple syrup, honey and brioche.
A 2017 bottling of Dalmore 40 Year Old, presented in a Baccarat decanter. This was initially aged in American oak bourbon barrels before being transferred over to Matusalem Oloroso Sherry butts for seven years, and then transferred into first-fill bourbon barrels. This release coincided with Master Distiller and all-around good egg Richard Paterson’s 50th year in the whisky industry.
Wow – this Highland malt is something else. 40 years young and aged in a combination of American white oak, Matusalem oloroso sherry and Amoroso sherry casks, it bears the hallmarks of master blender Richard Paterson, who put his Midas touch to the blend. Scents of sherry, smoke and marmalade: a masterpiece.

Definitive single malt whisky maker, The Dalmore, is releasing a refined new single malt, The Dalmore 45, to add to its exceptional collection.
The Dalmore 45 has been hand crafted by Master Distiller Richard Paterson who has used some of the distillery’s rarest aged liquids to create what Richard himself has described as ‘flawless perfection’.
Initially matured in American white oak ex-bourbon casks, the liquid has then been transferred into two different Vintage Graham’s Port Colheita pipes dating from 1961 and 1963 to create layers of flavour, which are indulgent, smooth and complex.
For its final flourish the whisky was then married together in first fill American white oak ex-bourbon casks providing The Dalmore 45 with a truly unrivalled finish. The Dalmore’s use of multiple casks is a fitting example of the distillery’s commitment to exquisite cask curation, which focuses on sourcing and utilising only the best casks from the world’s finest bodegas and wineries.
Purposefully retained at 40% ABV, The Dalmore 45 features exquisite flavours of red berries, soft liquorice, crushed hazelnuts, bitter chocolate and Manuka honey. This is followed by the sweet flavours of sticky toffee pudding, Bramley apples and juicy dates to finish.
Richard Paterson commented: “By personally selecting the very finest American white oak ex-bourbon casks and Port Colheita Pipes from 1961 and 1963, I have been able to create a truly unique expression which is indulgent and smooth with a vibrant and lively flavour profile. Indeed, this dram is part of a mini series of three whiskies from the Highland distillery. Each expression in this series showcases Dalmore’s spirit in an increasing number of cask finishes, with the Trio being finished in three casks, the Quartet in four, and the Quintet in five.
Dalmore Quintet has been finished in rare muscatel casks, Malmsey Madeira barrels, 30 year old matusalem sherry casks, 10 year old port casks and Cabernet Sauvignon casks from Bordeaux.
The result is an exceedingly rich and complex whisky, which serves up notes of pineapple, mango, bananas, maple syrup, espresso, dark chocolate, rich dried fruits, plums, marmalade, white grapes, malt, vanilla custard, rancio, old oak and leather.
